1 egg, well-beaten
1 ¾ cups all-purpose flour

Great-Grandma Cathy's Date Loaf Candy image

Handed down from my great-grandmother, and one of my father's all-time favorite holiday treats. Store in the refrigerator (rolled in the cloth), and it will keep for weeks. Otherwise, it becomes hard and sugary.

Tips:

  • Use a food processor to easily chop the dates and nuts.
  • If you don't have a food processor, you can chop the dates and nuts by hand using a knife. Just be sure to chop them very finely.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.
  • If you don't have baking soda, you can use baking powder instead. Just use 1 teaspoon of baking powder instead of 1/2 teaspoon of baking soda.
  • Be sure to grease and flour your loaf pan before baking the date loaf. This will help to prevent the loaf from sticking to the pan.
  • Bake the date loaf until a toothpick inserted into the center comes out clean. This usually takes about 50-60 minutes.
  • Let the date loaf cool completely before slicing and serving. This will help to prevent the loaf from crumbling.
