DATE DROP COOKIES
These cookies are very moist and delicious! You may use Pecans or English Walnuts for the nuts. My friends and I like them with Pecans. If you wish to make these healthier you can substitute 3 cups of whole wheat flour for 3 cups of the white flour.

Steps:
- 1. Pour boiling water over dates, set aside. Cream shortening and sugars. Beat in eggs. In a separate bowl sift together the dry ingredients. Combine the dry ingredients to the wet mixture. Drain excess water from dates, stir in the vanilla. Add dates and nuts to cookie dough. Drop by rounded teaspoons onto a greased cookie sheet. Bake in a preheated 350 degree F oven for 12 minutes.
Tips:
- Use a food processor to chop the dates finely. This will help them blend into the cookie dough more easily and evenly.
- If you don't have a food processor, you can chop the dates by hand. Just be sure to chop them very finely, so that they don't end up being too chunky in the cookies.
- Don't overmix the cookie dough. Overmixing can make the cookies tough.
- If you want the cookies to be extra chewy, chill the cookie dough for at least 30 minutes before baking.
- Bake the cookies until they are just set. Overbaking can make the cookies dry and crumbly.
- Let the cookies cool completely before enjoying them. This will help them to firm up and develop their full flavor.
Conclusion:
Date drop cookies are a delicious and easy-to-make treat that are perfect for any occasion. They are chewy, flavorful, and packed with nutrients. Plus, they are a great way to use up any leftover dates. So next time you are looking for a sweet snack or dessert, be sure to give date drop cookies a try.
