Steps:

  • Whisk the eggs: Whisk 3 large eggs, 1 pinch of kosher salt, 1 grind of black pepper and 3 tablespoons whole milk together until light and foamy.
  • TIP: Odds are you're going to be serving these on a plate. If so, I strongly suggest you park an ovensafe one in a low oven or in hot water while you're cooking. Cold plates suck the heat right out of food.
  • Add to the pan: Add 1 tablespoon unsalted butter to a 10-to-12-inch nonstick skillet and put it over high heat. When the butter bubbles (after about a minute), pour the eggs straight into the middle of the pan, which will force the butter to the edges, where it's needed.
  • Scramble the eggs: Stir slowly with a rubber or silicone spatula. As soon as curds (big soft lumps) of eggs begin to form, drop the heat to low and shift from stirring to folding the curds over on themselves while gently shaking the pan with the other hand.
  • Let rest: As soon as no more liquidous egg is running around the pan, kill the heat and gently transfer the scramble to the warmed plate. Let the eggs rest for 1 minute to finish cooking before serving.

Tips:

  • Use fresh eggs: Fresh eggs will give you the best results. Older eggs may have a watery texture and a less vibrant color.
  • Use a non-stick skillet: A non-stick skillet will help prevent the eggs from sticking and will make it easier to clean up.
  • Heat the pan over medium heat: If the pan is too hot, the eggs will cook too quickly and become dry. If the pan is too cool, the eggs will take too long to cook and may not cook evenly.
  • Add butter or oil to the pan: This will help prevent the eggs from sticking and will add flavor.
  • Beat the eggs well: Beating the eggs well will help them cook evenly and will give them a light and fluffy texture.
  • Cook the eggs slowly and gently: Don't stir the eggs too often, as this will break them up and make them tough. Stir them just enough to keep them from sticking to the pan.
  • Season the eggs with salt and pepper: Salt and pepper are the classic seasonings for scrambled eggs, but you can also add other seasonings, such as herbs, spices, or cheese.
  • Serve the eggs immediately: Scrambled eggs are best served hot and fresh. If you need to keep them warm for a short period of time, you can place them in a warm oven or on a warming tray.

Conclusion:

Scrambled eggs are a quick, easy, and delicious breakfast or brunch option. With a few simple tips, you can make perfect scrambled eggs every time. So next time you're looking for a tasty and satisfying meal, give scrambled eggs a try!
