1 ½ tablespoon active dry yeast
2 cups water (lukewarm)
3 tablespoon molasses
¼ cup cocoa powder (unsweetened)
1 ½ teaspoon salt
2 tablespoon caraway seeds
2 tablespoon vegetable oil
1 ½ cups rye flour
3 cups all-purpose flour
1 tablespoon cornmeal (for dusting)

Steps:

  • Add the lukewarm water and yeast to the bowl of your mixer, stir and let it dissolve for 5 to 10 minutes.
  • To the yeast mixture, add the molasses, cocoa powder, salt, caraway seeds, vegetable oil, rye flour, and about 2 1/2 cups of all purpose flour. Beat on medium speed until smooth. Add in remaining flour and keep mixing until it forms a firm dough (about 5 minutes), the dough should come clean from the side of the bowl.
  • Spray a large bowl with cooking spray and place the dough in the bowl, spray the dough as well with cooking spray, cover with a clean damp kitchen towel or plastic wrap and let the dough rest until it doubles in size in a warm, draft free environment.
  • Place a piece of parchment paper on your work surface. Sprinkle the cornmeal over the parchment paper. Punch down the dough and stretch it from the center to form a ball. Place the ball onto the prepared parchment paper. Let it rise for another 30 to 40 minutes until doubled in size. Once doubled, sprinkle a bit of flour over the top of the dough and cut a few slashes with a sharp knife.
  • Preheat the oven to 425 F°. Place a shallow pan (not glass) on the lower rack in the oven. Transfer the bread with the parchment paper on a baking sheet or into a Dutch oven and place in the oven. Pour 1 cup of water in the shallow pan on the lower rack.
  • Bake for 30 minutes until crusty and golden brown

One and third cups of lukewarm water (300 ml)
One-third cup of brown sugar
2 Tablespoons of powdered milk
Two teaspoons of salt
Three cups of all-purpose flour
One cup of dark rye flour, also known as whole grain rye flour and pumpernickel flour
2 ½ teaspoons of bread machine yeast
3 Tbsp of room temperature butter
Two teaspoons of caraway seeds

Steps:

  • Add the water, sugar, milk, salt, and flour to the bread machine.
  • Add 2 ½ teaspoons of bread machine yeast. Active dry yeast or instant yeast will work as well.
  • Close the lid and set the baking cycle to Basic or White Bread Cycle. Press start.
  • About 5 to 10 minutes before the end of the kneading cycle, add two teaspoons of caraway seeds.
  • Let the bread machine finish the baking cycle. Once finished, remove the bread pan and place the loaf on a cooling rack for 15-20 minutes before slicing.

4 to 4-1/2 cups all-purpose flour
4 cups rye flour
2 cups All-Bran
2 packages (1/4 ounce each) active dry yeast
2 tablespoons instant coffee granules
1 tablespoon sugar
1 tablespoon salt
1 tablespoon caraway seeds
1 teaspoon fennel seed, crushed
1/2 teaspoon ground coriander
3 cups water, divided
1/2 cup molasses
1/4 cup butter, cubed
2 tablespoons cider vinegar
1 ounce unsweetened chocolate
1 tablespoon cornstarch

Steps:

  • In a large bowl, combine the first 10 ingredients. In a saucepan, heat 2-1/2 cups water, molasses, butter, vinegar and chocolate to 120°-130°. Add to dry ingredients; beat just until moistened. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours., Punch dough down. Turn onto a lightly floured surface. Divide dough in half; shape each portion into a ball. Place on greased baking sheets. Cover and let rise until doubled, about 30 minutes. , Bake at 375° for 50-55 minutes or until golden brown. Remove from pans to wire racks to cool. , In a small saucepan, combine the cornstarch and remaining water until smooth. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Brush over bread.

3 teaspoons dried yeast
2 cups bread flour
1 1/2 cups rye flour
1 1/2 teaspoons salt
2 tablespoons cocoa powder
1 teaspoon instant coffee powder
1 tablespoon caraway seed (more or less according to taste)
2 tablespoons oil
1 tablespoon golden syrup
1 tablespoon molasses
1 1/2 cups water

Steps:

  • Place all of the above ingredients, accurately measured and in the order I have listed them, into the bread machine.
  • Select the 'dough' cycle.
  • When the cycle is complete, take the dough out of the bread machine, place it in a well greased bowl, cover and leave to rise in a warm place for about 1/2 an hour.
  • Then knead the dough lightly (while still in the bowl), for about 1 minute.
  • Turn out onto a lightly floured surface.
  • Either 'pat' the dough into a ball, flatten slightly and pinch all the edges underneath, and place in a round pan and dust with flour, OR 'pat' the dough into a 'log' shape and place in a loaf tin, for a rectangular or 'brick' shape.
