Original recipe for Danish Aebleskiver also known as Danish Pancake Balls. These traditional pancake balls are traditinal served during Christmas. However, they are also perfect the rest of the year.

250 g all-purpose flour
1/4 tsp salt
1/2 tsp Natron ((baking soda))
1 tbsp vanilla sugar
4 dl buttermilk
100 g butter, melted
3 eggs
1 tbsp sugar

Steps:

  • Separate the egg whites and yolks in separate bowls.
  • Whisk the sugar and egg whites fluffy and stiff. The bowl must be completely clean and dry. A tiny bit of water will make the eggs whites impossible to whisk stiff. Set aside.
  • Mix the egg yolks, all-purpose flour, natron (baking soda), salt and vanilla sugar together in a separate bowl.
  • Use a hand mixer to mix the ingredients while gradually adding the buttermilk. Keep mixing until the batter is uniform.
  • Melt the butter and let it cool off a bit. Slowly add the cooled butter to the buttermilk mixture while whisking.
  • Use a wooden spoon or similar to slowly mix the stiff eggs whites in the batter.
  • You need a special Aebleskive pan for frying. You can get one online or maybe at your local kitchen store.
  • Heat up the Aebleskive pan at medium heat and add a small piece of butter in each hole. Fill the holes 3/4 with the Aebleskive batter.
  • When the batter starts to get firm and you can turn them over without cracking, then turn the Aebleskiver 90 degrees (using a wooden stick or similar) and let the batter flow into the pan.
  • At this point there is a hole in the side of the Aebleskive. Pour a little extra batter into the hole and turn the Aebleskive another 90 degrees so that the hole gets closed.
  • When the Aebleskiver have a solid surface turn them regularly so they get an even and light-brown crust.

2 tablespoons white sugar
2 ½ teaspoons baking powder

Steps:

3/4 cup self-raising flour
1 teaspoon baking powder
1 tablespoon caster sugar
2 eggs
1 cup milk
2 apples, thinly sliced
1 tablespoon caster sugar, extra
1/4 teaspoon cinnamon

Steps:

  • Preheat oven to 200.C.
  • Sift flour & baking powder into a bowl & add 1 tblsp caster sugar.
  • Combine eggs & milk separately & whisk into flour mixture until smooth.
  • Heat a 22cm oven & stove proof plate or pan over a medium heat on the stove and add 20g butter, heat until butter begins to froth.
  • Add apples, cinnamon & extra sugar, toss well and cook for approx 2-3 mins until apple is tender.
  • Remove half the apples & pour half the batter over the apples in the pan.
  • Bake in the oven for 4-5 mins or until browned & cooked through.
  • Repeat with remaining apples & batter.
  • Serve dusted with icing sugar & drizzled with cream.

2 large eggs
2 cups whole milk
1/2 cup butter, melted
1-1/4 cups all-purpose flour
2 tablespoons plus 2-1/2 teaspoons sugar, divided
3-3/4 cups vanilla ice cream
Fresh blueberries and sliced strawberries

Steps:

  • In a large bowl, whisk eggs, milk and butter. In a small bowl, mix flour and 2 tablespoons sugar; add to egg mixture and mix well. Refrigerate, covered, 1 hour., Heat a lightly greased 8-in. nonstick skillet over medium heat. Stir batter. Fill a 1/4-cup measure three-fourths with batter; pour into center of pan. 1 c flour (make gluten free 1/4 c almond flour, 1/4 c coconut flour, 1/4 sorghum or millet flour, and 1/4 c starch)
1/2 t salt
1/2 c cream (make dairy free w/So Delicious Dairy Free creamer - plain)
2 T chia seeds (optional)
3 apples, peeled and sliced
butter
cinnamon
juice from one lemon

  • Beat eggs lightly and add milk (and chia seeds if using). Combine sugar, flour and salt; add to egg mixture. Stir in cream. Fry apple slices over medium-high heat in butter until they are golden brown. Cover the bottom of a lightly buttered baking dish with the fried apples. (The recipe did not state what size dish to use. I used a 11 3/4 x 7 1/2 casserole dish and the recipe was ready closer to 15-20 min mark).
