COCONUT VANILLA CUSTARD ICE CREAM - LOW CARB AND DAIRY-FREE

Coconut Vanilla Custard Ice Cream - Low Carb and Dairy-Free image

This recipe makes a decadent, low carb, and dairy-free ice cream that is really out of this world! You will love this even if you don't love coconut. My husband (who has no dietary restrictions and is an ice cream addict) told me that this is the best that he's ever had. Each 1/2 cup serving contains 6.4 grams of net carbohydrates, and 24.2 grams of healthy fat from the coconut (gotta love those medium chain triglycerides)!

Categories     Ice Cream

Time 3h15m

Yield 1/2 cup, 12 serving(s)

Number Of Ingredients 6

4 cups of canned regular unsweetened coconut milk (use 2 full cans plus the solid part of the 3rd can of coconut milk)
1/4 cup high quality unrefined, organic coconut oil
1/2 cup Stevia Truvia
1 pinch salt
5 large egg yolks
2 teaspoons good vanilla extract

Steps:

  • In a medium saucepan set over medium-low heat, whisk together the coconut milk, coconut oil, truvia, and salt. Bring the mixture just to a boil.
  • While the coconut mixture is heating, whisk the egg yolks until pale and aerated.
  • Once the coconut mixture has come to a slight boil, whisk about 1/3 of the mixture into the yolks.
  • Add another 1/3 of the mixture to the yolks, whisking quickly, then return the combined mixture to the saucepan.
  • Using a wooden spoon, stir the mixture constantly over low heat until it thickens slightly and coats the back of the spoon, about 2-3 minutes. Do not boil or the eggs can coagulate.
  • Pour the mixture through a fine mesh strainer and bring to room temperature. Stir in the vanilla extract.
  • Cover and refrigerate overnight in the lowest part of your refrigerator.
  • Follow your ice cream makers instructions to freeze your ice cream. With my Cuisinart, I pour the mixture into the frozen freezer bowl and let it mix until thickened, about 20 minutes. This is a good time to serve it. If you have leftovers or will not eat it right after fabricating, transfer the ice cream to an airtight container and place in the freezer. When you do serve it, let it sit out for about 20 minute to soften slightly.

MAPLE WALNUT ICE CREAM (DAIRY FREE)

Maple Walnut Ice Cream (Dairy Free) image

A delightful cool treat that is healthier than regular ice cream but still has a creamy rich flavor. I like to break my over ripe bananas into chucks before freezing them so that they are ready to go when making banana bread or ice cream. The prep time will depend on your food processer, mine only takes about 2 - 4 minutes, bananas should be frozen sold (like over night).

ANN 'S ALMOND CHOCOLATE ICE CREAM DAIRY FREE

Ann 's Almond Chocolate Ice Cream Dairy Free image

I made Horchata De Almendra (Almond Horchata) milk from here on zaar to make this non dairy ice cream! Great for the lactose intolerant! And full of almond flavor. Be sure to use sweetened almond milk as in these 2 recipe #230449 or recipe #229086 because there is no additional sugar in this recipe. Strain it well so it is smooth. or if not it will have a little texture. The term 'coat a spoon' is a technique used mainly as a way to test when an egg-based custard or sauce is done. A spoon, usually wooden, is placed in the custard and, when the spoon is raised, the film of custard on the back of the spoon will stay in place even when you draw a line with your finger through the middle of the custard.

ALMOND ICE CREAM (DAIRY FREE)

Almond Ice Cream (Dairy Free) image

Make and share this Almond Ice Cream (Dairy Free) recipe from Food.com.

Provided by UmmBinat

Categories     Frozen Desserts

Time P1DT15m

Yield 1 1/2 Pints, 6 serving(s)

Number Of Ingredients 5

1 lb blanched almond
8 cups water
2 1/2 cups sugar
2 tablespoons grated lemon zest
1 cinnamon stick

Steps:

  • In a blender or food processor, very finely grind the almonds. Use the pulse function and watch carefully. You do not want the nuts to release too much oil, which will turn them into nut butter.
  • In a heavy saucepan, combine the water, sugar, lemon zest, cinnamon stick, and half of the almonds.
  • Place over high heat and bring to a boil, stirring constantly.
  • Decrease the heat to medium and add the rest of the almonds, continuing to stir.
  • As soon as the mixture boils again, remove from the heat and let cool completely.
  • Transfer the cooled mixture to an ice-cream maker and freeze according to the manufacturer's instructions. If you do not have an ice-cream maker, transfer the mixture to a 4-cup container (a glass, stainless-steel, or plastic bowl will do) and place in the freezer for about 1 hour, or until half frozen.
  • During this hour, remove the ice cream from the freezer every 5 to 10 minutes and beat it with a whisk to prevent ice crystals from forming.
  • After the first hour, return the ice cream to the freezer and leave it there for at least 2 hours, or until fully frozen.
  • When made by either method, transfer the finished ice cream to an airtight container and store in the freezer. It will keep for up to 1 week.
  • When ready to serve, remove the ice cream from the freezer about 20 minutes in advance to allow it to soften slightly. Spoon into small dishes to serve.

Sweet dairy-free frozen dessert with a smooth, rich taste. Even the dairy lovers in our family enjoy this treat!

Provided by Mel & the boys

Categories     Desserts     Fruit Dessert Recipes     Strawberry Dessert Recipes

Time 9h30m

Yield 12

Number Of Ingredients 7

¾ cup turbinado sugar
1 teaspoon unflavored gelatin
1 (14 ounce) can unsweetened coconut milk
1 ¼ cups rice milk
4 egg yolks, beaten
2 cups hulled strawberries
2 teaspoons pure vanilla extract

Steps:

  • Combine turbinado sugar and gelatin together in a large saucepan; add coconut milk and rice milk. Cook and stir milk mixture over medium heat until almost boiling and sugar is dissolved, about 5 minutes.
  • Scoop about 1/2 cup hot milk mixture into a bowl with the beaten egg yolks; whisk together. Slowly pour egg mixture back into the saucepan, stirring constantly. Lower heat to medium-low to avoid curdling; cook and stir until mixture is smooth, about 3 minutes; do not boil. Remove from heat and cool slightly.
  • Place strawberries in a blender and pulse several times to chop before leaving it on to puree.
  • Stir strawberry puree and vanilla extract into milk mixture. Refrigerate until very cold, 8 to 48 hours. Pour chilled strawberry mixture into a 4-quart ice cream maker and follow manufacturer's instructions.

Tips:

  • Always use fresh, high-quality ingredients to ensure the best flavor and texture.
  • Chill the ice cream base thoroughly before churning. This will help the ice cream freeze more evenly and smoothly.
  • Churn the ice cream base until it reaches a soft-serve consistency. Over-churning will make the ice cream icy.
  • Transfer the soft-serve ice cream to a freezer-safe container and freeze for at least 4 hours, or overnight, before serving.
  • To make sure your ice cream is always thick and smooth, store-bought or homemade, use rock salt when churning. The bigger granules will help lower the freezing point of the ice mixture, which gives you creamier results.
  • Try adding different flavors and mix-ins to your ice cream to create unique and delicious variations. Some popular add-ins include chocolate chips, sprinkles, fruit, and nuts.

Conclusion:

Making homemade dairy ice cream is a fun and rewarding experience. With a few simple ingredients and a little time, you can create delicious and refreshing ice cream that your family and friends will love. So next time you're looking for a sweet treat, give one of these dairy ice cream recipes a try.
