Steps:
- In the bowl of an electric mixer fitted with the paddle attachment, combine 1 1/4 cups confectioners' sugar, margarine, salt, and vanilla, scraping down the sides of the bowl with a spatula as necessary.
- Add rice milk and continue mixing until well combined, scraping down the sides of the bowl with a spatula, as necessary. With the mixer running, slowly add remaining 1/2 cup confectioners sugar, mix until well combined. Store in an airtight container, refrigerated, up to one week.
Tips:
- To achieve a smooth and creamy frosting, ensure that all ingredients, particularly the vegan butter or coconut oil, are at room temperature before mixing.
- If using a stand or hand mixer, begin at a low speed and gradually increase to medium speed to prevent splattering.
- For a thicker frosting, chill for at least 30 minutes before using. Alternatively, for a pourable frosting, adjust the consistency by adding more plant-based milk.
- Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
- Experiment with different extracts, such as almond or lemon, to create unique flavor variations.
- For a glossy finish, add a tablespoon of melted coconut oil or vegan butter to the frosting before serving.
Conclusion:
With a few simple ingredients and a touch of culinary creativity, you can whip up a delectable dairy-free vanilla frosting that rivals traditional recipes. Whether you're adorning a cake, cupcakes, cookies, or simply indulging in a spoonful, this frosting offers a delightful symphony of flavors and textures. Its versatility allows for customization, making it a perfect accompaniment to various desserts. Embrace the joy of baking and treat yourself to a guilt-free, plant-based frosting experience!
