EASY VEGAN FLAN (NO-BAKE!)

Easy Vegan Flan (No-Bake!) image

Creamy, luxurious vegan flan with salted caramel sauce, no baking required! Surprisingly easy to make with just 7 simple ingredients.

Categories     Dessert

Time 4h15m

Number Of Ingredients 10

1/3 cup coconut sugar
1/4 tsp sea salt
1/2 tsp vanilla extract
1 Tbsp water
1/4 tsp sea salt
2 Tbsp cornstarch or arrowroot starch
1 tsp agar agar powder ((not flakes))
1/3 cup maple syrup
4 tsp vanilla extract
2 (13.5-ounce) cans full-fat coconut milk ((we like Whole Foods 365 brand))

Steps:

  • Start by getting out 4 individual ramekins; ideally they should be 3-4 inches in diameter (at the base) and 2-3 inches deep. Place them within easy reach.
  • CARAMEL: Add the coconut sugar, salt, vanilla extract, and water to a medium saucepan and turn on medium-low heat. Set a timer for 3 minutes and stir constantly while cooking - the sugar will dissolve and the mixture should start to bubble vigorously and thicken slightly. Stick with it! If it is only gently bubbling, turn up your heat very slightly. Or if it's smelling burnt at all, turn heat down. As soon as the 3-minute timer goes off, quickly distribute the caramel between your 4 prepared ramekins (~1 heaping tablespoon per ramekin). Set aside.
  • CUSTARD: You can rinse the same saucepan with hot water and use it for the custard, or choose another - make sure whatever pan you choose is deep enough to hold 4 cups (950 ml) of boiling liquid.
  • Add the salt, cornstarch or arrowroot, agar agar, maple syrup, and vanilla extract to the cooled (or room temperature) saucepan and whisk together until few lumps remain. Then add the coconut milk and whisk vigorously until well combined.
  • Place the saucepan over high heat, whisking continuously until the mixture comes to a boil. This should take about 5-7 minutes. Then reduce the heat to medium low and set a timer for 2 minutes. Continue whisking until the timer goes off. The mixture will have thickened but should still be quite loose and pourable.
  • Carefully distribute the custard between the ramekins, on top of the caramel. Let the flan cool for 5-10 minutes before transferring it to the refrigerator. Refrigerate for 3 hours, uncovered. If chilling for more than 3 hours, cover lightly with foil, leaving room for a bit of ventilation.
  • Once set, you can eat your flan straight from the ramekins with a spoon, or carefully remove them by loosening the edges with a butter knife and turning them upside down onto a plate. You may need to shake gently and tap the bottom to help them slip out!
  • Best enjoyed the first day, but will keep for up to 3 days lightly covered in the refrigerator. Not freezer friendly.

6 eggs
1 (14 ounce) can sweetened condensed milk

1 ½ cups whole milk
1 teaspoon vanilla extract
1 cup white sugar

Steps:

Time 3h30m

Yield 6

Number Of Ingredients 7

¾ cup white sugar
¾ cup whole milk
1 cup coconut milk
½ (12 fluid ounce) can evaporated milk
½ (14 ounce) can sweetened condensed milk
½ teaspoon vanilla extract
3 eggs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 6 (4-ounce) ramekins.
  • Slowly melt sugar in a large skillet over low heat, stirring constantly, until browned but not scorched, about 8 minutes. Divide caramel equally among the ramekins and allow to cool.
  • Combine whole milk, coconut milk, evaporated milk, sweetened condensed milk, and vanilla extract in a saucepan over low heat. Stir continuously until it begins to steam, about 5 minutes.
  • Whisk 3 eggs together in a bowl; slowly pour beaten eggs into the warm milk mixture, whisking constantly until the custard is combined.
  • Place ramekins in a casserole dish and fill with boiling water to reach halfway up the sides of the ramekins. Divide custard evenly among ramekins, over the caramel sauce, about 1/2 inch from the top. Cover casserole dish tightly with foil. Bake in the preheated oven until the custard is set, about 1 hour. A knife gently inserted into the center of a flan should come out clean.
  • Remove ramekins from the water bath and allow to cool to room temperature. Refrigerate for 2 to 3 hours before serving to chill completely. Run the tip of a paring knife around the edges to release the flan. Place a plate over the top of the ramekin and flip to release the flan onto the plate, caramel side up.

Tips for Making a Perfect Dairy-Free Coconut Flan:

  • Use a good quality coconut milk. This is the main ingredient in the flan, so it's important to use a brand that you like the taste of. Look for a coconut milk that is thick and creamy, and avoid using coconut milk that has been watered down.
  • Don't overcook the flan. The flan should be cooked until it is just set, but not overcooked. Otherwise, it will be rubbery. To test if the flan is done, insert a toothpick or knife into the center. If it comes out clean, the flan is done.
  • Chill the flan before serving. The flan should be chilled for at least 4 hours, or overnight, before serving. This will help the flan to set properly and develop its full flavor.
  • Serve the flan with your favorite toppings. Some popular toppings for coconut flan include fresh fruit, whipped cream, and caramel sauce.

Conclusion:

This dairy-free coconut flan is a delicious and creamy dessert that is perfect for any occasion. It is easy to make and can be enjoyed by people of all ages. So next time you are looking for a dairy-free dessert, give this coconut flan a try. You won't be disappointed!
