DUTCH DAINTIES
I clipped this recipe from the Toronto Star and used to make it quite a bit. I don't know where the name "dutch dainties" comes from. I think of it as a glorified coconut tart. I have substituted chocolate chips for the maraschino cherries with good results. I also have made these in mini-muffin tins (24 servings) for more of a "ccokie sized" serving. Just reduce baking time (I believe 10-14 minutes).

Tips:
- Chill the dough: Chilling the dough before baking helps the cookies hold their shape and prevents them from spreading too much.
- Use a cookie scoop: A cookie scoop helps ensure that all of the cookies are the same size and shape, which helps them bake evenly.
- Bake the cookies until they are just set: Overbaking the cookies will make them dry and crumbly. Bake them just until the edges are golden brown and the centers are still slightly soft.
- Let the cookies cool completely before serving: The cookies will continue to firm up as they cool. Let them cool completely before serving so that they are easy to handle.
