1 tablespoon baking powder
½ teaspoon salt
2 tablespoons sugar
2 eggs (divided)
1 ⅔ cup milk
⅓ cup melted butter (or oil)

Steps:

  • Preheat the waffle iron according to the manufacturer's directions.
  • Place flour, baking powder, sugar, and salt in a bowl. Whisk to combine.
  • In a small bowl, mix egg yolks, milk, and butter. Set aside.
  • In a separate bowl, beat egg whites with a mixer on medium high speed until stiff peaks form. *see note
  • Add egg yolk mixture to flour mixture and stir to combine. Fold in egg whites.
  • Drop by large spoonfuls onto greased waffle iron, close the lid and cook about 3-5 minutes.

2 cups pancake mix (we use trader joe's multi-grain pancake mix because it has no trans fats)
1 1/3 cups 1% low-fat milk or 1 1/3 cups nonfat milk
2 tablespoons canola oil or 2 tablespoons softened butter
1 egg
1/4 cup nuts (we use pecans and walnuts)
1 banana
1 teaspoon cinnamon
1 teaspoon honey
1 teaspoon vanilla
semi-sweet chocolate chips, 12 semi-sweet chocolate chips, per waffle (for a special treat) (optional)

Steps:

  • Combine everything in a blender and mix until combined and nuts are crushed.
  • Heat up waffle iron and grease lightly with nonstick spray.
  • Cook according to manufacturers directions.
  • Top with pure maple syrup, butter, fat free whipped cream, fruit or whatever else you want!

WAFFLES :
2 c original bisquick mix
1 c beer- orange or apple juice
2 large eggs

1/2 c real bacon pieces
1/3 c brown sugar
MAPLE ORANGE SYRUP:
1 c maple flavored syrup
3 Tbsp orange juice
3 Tbsp butter

Steps:

  • 1. Waffles: Heat griddle or electric skillet to 375 ^.Spray griddle. In a small saucepan combine the 1/3 cup brown sugar and the bacon - heat over medium heat until sugar melts and bacon is glazed - do not burn. Set aside to cool slightly.
  • 2. Beat bisquick, beer and eggs with a whisk. If batter is too thick, add a little more beer until desired consistency. If any beer is left just drink it. Stir in bacon mixture.
  • 3. Pour by 1/2 cup of batter onto griddle. Cook until edges are dry if making into pancakes. Serve with warm syrup and a nice scoop of soft butter.
  • 4. Syrup: Heat ingredients in a small saucepan. Keep warm until ready to use.
