1 pound boneless skinless chicken breast
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1 teaspoon paprika
salt & pepper (to taste)
2 tablespoons olive oil
1 tablespoon butter
4 cloves garlic (minced)
1 cup tomatoes (diced)
2 cups spinach (chopped, optional)
2 cups heavy cream ((or 16 oz))
1/2 cups Parmesan cheese (shredded or grated)
salt & pepper (to taste)

Steps:

  • Prep Pasta: Boil water in a large pot and cook pasta al dente according to package instructions.

1 pound chicken cutlets or tenders
1 cup Panko
1 1/2 cups grated parmesan
4 tablespoons extra virgin olive oil
kosher salt and black pepper
1 pound short cut pasta
1 medium yellow onion, chopped
2 bell peppers, chopped
3 cloves garlic, finely chopped or grated
3-4 teaspoons cajun seasoning
crushed red pepper flakes
2 cups milk
1/2 cup heavy cream or canned coconut milk
2 ounces cream cheese, at room temperature
2 tablespoons chopped fresh parsley

Steps:

  • 1. Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Drain.2. Meanwhile, place the Panko and 1/2 cup parmesan in a shallow bowl. Dredge both sides of the chicken through the Panko, pressing to adhere by using your fist to really pound the crumbs in. Place the chicken on a plate. Set aside.3. To make the pasta. Heat 2 tablespoons olive oil over medium high heat. Add the onion and cook until soft, about 5 minutes. Add the bell peppers, and garlic, cook another 5 minutes until the peppers are soft. Stir in the cajun seasoning, and a pinch each of red pepper flakes, salt, and pepper. Cook another minute, until the spices are fragrant, then pour in the milk and cream. Add the cream cheese. Whisk until smooth. Bring the sauce to a gentle simmer and cook 5-8 minutes, until thickened slightly. 4. To cook the chicken. Heat 2 tablespoons of oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown, 3-4 minutes. Flip the chicken and cook until golden brown on the other side, 3-4 minutes. Transfer to a cutting board and season with salt. Slice into thin strips.5. To the sauce, stir in the parmesan. Toss in the pasta and cook 3-5 minutes, then remove from the heat and stir in the parsley.6. 2 cups all-purpose flour
½ cup shortening
1 egg
½ cup milk
1 whole chicken
2 cubes chicken bouillon
2 cups chopped celery
2 cups chopped carrots
1 small onion, chopped
salt and ground black pepper to taste

Steps:

  • Mix flour and shortening together in a bowl until it resembles cornmeal.
  • Slightly beat egg and milk together in a separate bowl. Add to flour mixture and stir to form a ball of dough. Place onto a floured surface; knead and roll as thin as possible using a floured rolling pin. Let dough stand for 2 hours.
  • Place chicken into a large pot and add water to just cover. Bring to a boil over high heat and continue to boil until chicken is no longer pink in the center and meat falls off of the bone, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C).
  • Remove chicken from the pot; strain broth and return to the pot. Add 2 cups water and bouillon. Remove meat from bones and return to broth. Add celery, carrots, and onion. Bring to a boil; continue to boil for 15 minutes.
  • Meanwhile, cut dough into strips, approximately 1-inch wide. Tear strips and drop into boiling broth. Continue to boil for 10 minutes more. Season with salt and pepper and serve.

7 chicken breasts, cubed (3 lbs.)

1 bundle fresh spinach, stemmed and washed
2/3 bag rotini pasta, cooked al dente

  • Preheat skillet to 300, medium. Heat olive oil, throw in chicken, toss till thoroughly cooked but not brown. Add garlic, parsley garlic mixture. Stir. Add red peppers, sun dried tomatoes and spinach. When spinach has reduced in size, add salt and pepper. Pour 4 cups warm cream. Let simmer a few minutes. Stir in cooked pasta.
