Time 2h45m

Yield 6-8 serving(s)

Number Of Ingredients 10

1 1/2 lbs hamburger
2/3 cup dry breadcrumbs
1 cup tomato juice
2 eggs (beat)
1/8 teaspoon pepper
1 teaspoon salt
1/4 cup onion (chopped)
3 tablespoons brown sugar
1/4 cup ketchup
1 teaspoon dry mustard

Steps:

  • Mix hamburger, bread and juice together until well blended.
  • Add eggs, pepper, salt and onion and mix together until well blended.
  • Cook in loaf pan for 1 hour at 350°.
  • Mix together brown sugar, ketchup and dry mustard.
  • Place on top of meatloaf after 1 hour and cook for another 30 minutes.

Tips:

  • Use a cast iron skillet for the best results. Cast iron skillets evenly distribute heat, resulting in a crispy crust and moist interior.
  • Do not overmix the cornbread batter. Overmixing will result in a tough, dense loaf of cornbread.
  • Let the cornbread rest for at least 10 minutes before serving. This will allow the flavors to meld and the bread to firm up.
  • Use a variety of meats in the meatloaf. This will add flavor and texture to the dish.
  • Do not overcook the meatloaf. Overcooked meatloaf will be dry and tough.
  • Use a meat thermometer to ensure that the meatloaf is cooked to an internal temperature of 165 degrees Fahrenheit.
  • Let the meatloaf rest for at least 10 minutes before slicing and serving. This will allow the juices to redistribute throughout the loaf.

Conclusion:

This recipe for Dad's Down Home Cornbread and Jalapeno Meatloaf is a delicious and hearty meal that is perfect for any occasion. The cornbread is moist and flavorful, while the meatloaf is packed with flavor and spice. This dish is sure to be a hit with your family and friends.
