1 box white cake mix
ingredients to prepare cake mix
1 package white melting wafers / candy melts
bunny ears printable
zip top plastic bags
decorating bag with small round tip
1 cup white chocolate chips
1 (8-ounce) package cream cheese, (at room temperature)
4 tablespoons unsalted butter, (at room temperature)
2 cups powdered sugar
2 teaspoons vanilla extract
1 (7-ounce) package shredded coconut

Steps:

  • Prepare cake mix according to package directions, making 24 cupcakes.
  • When cupcakes are done baking, transfer them to a wire rack to cool completely before frosting.
  • Add about half of the melting wafers to a small bowl. Melt according to package directions. Transfer melted candy to a pastry bag with a small round tip.
  • Slide bunny ears printable into a zip top bag.
  • Using pastry bag, trace around ears with melted candy, then fill in with more candy. When you've traced around all the ears, carefully remove printable from zip top bag.
  • Place bag on a flat surface, then freeze ears until ready to use. Repeat process until you have enough ears for all of your cupcakes. Melt more candy, if necessary.

sweetened flake coconut, or as needed
1 drop red food coloring, or as needed
12 whole graham cracker squares (4 cookies each)

120g golden caster sugar
120g butter , softened
100g pot natural yogurt
1 lemon , zested
2 eggs
250g pack fondant icing
85g unsalted butter , softened
few drops vanilla extract
200g icing sugar
few drops green food colouring

Steps:

  • Heat oven to 190C/170 fan/gas 5 and line a 12-hole bun tin with paper cases. Put the flour, sugar, butter, yogurt, lemon zest and eggs in a bowl and mix with electric beaters until smooth. Spoon a large tablespoon of the mixture into each of the cases, making them as even as possible. Bake for 20-25 mins until the cakes are risen and golden, and a skewer poked into the centre of one comes out clean. Set aside to cool on a wire rack.
  • For the frosting, beat the butter, vanilla extract and icing sugar until the mixture is pale and creamy, and completely combined. Add a few drops of green colouring and beat it in.
