Time 2h31m

Yield 14 servings

Number Of Ingredients 15

½ cup unsalted butter, melted
2 cups whole milk, warm to the touch
½ cup granulated sugar
2 ¼ teaspoons active dry yeast
5 cups flour, divided
1 teaspoon baking powder
2 teaspoons salt
¾ cup butter, softened
¾ cup light brown sugar
2 tablespoons ground cinnamon
4 oz cream cheese, softened
2 tablespoons butter, melted
2 tablespoons whole milk
1 teaspoon vanilla extract
1 cup powdered sugar

Steps:

  • Generously butter two disposable foil pie/cake pans.
  • In a large bowl, whisk together warm milk, melted butter, and granulated sugar. The mixture should be just warm, registering between 100-110˚F (37-43˚C). If it is hotter, allow to cool slightly.
  • Sprinkle the yeast evenly over the warm mixture and let set for 1 minute.
  • Add 4 cups (500g) of all-purpose flour to the milk mixture and mix with a wooden spoon until just combined.
  • Cover the bowl with a towel or plastic wrap and set in a warm place to rise for 1 hour.
  • After 1 hour, the dough should have nearly doubled in size.
  • Remove the towel and add an additional ¾ cup (95g) of flour, the baking powder, and salt. Stir well, then turn out onto a well-floured surface.
  • Knead the dough lightly, adding additional flour as necessary, until the dough just loses its stickiness and does not stick to the surface.
  • Roll the dough out into a large rectangle, about ½-inch (1 cm) thick. Fix corners to make sure they are sharp and even.
  • Spread the softened butter evenly over the dough.
  • Sprinkle evenly with brown sugar and a generous sprinkling of cinnamon.
  • Press the mixture into the butter.
  • Roll up the dough, forming a log, and pinch the seam closed. Place seam-side down. Trim off any unevenness on either end.
  • Cut the log in half, then divide each half into 7 evenly sized pieces. About 1½ inches (8cm) thick each.
  • Place 7 cinnamon rolls in each cake pan, one in the center, six around the sides. Cover with plastic wrap and place in a warm place to rise for 30 minutes.
  • Preheat oven to 350˚F (180˚C).
  • To prepare the frosting. In a medium-size mixing bowl, whisk together cream cheese, butter, whole milk, vanilla, and powdered sugar, until smooth.
  • Remove plastic wrap. Bake the cinnamon rolls in a preheated oven for 25-30 minutes, until golden brown.
  • While still warm, drizzle evenly with frosting.
  • Enjoy!

CINNAMON ROLL CASSEROLE

Cinnamon Roll Casserole image

This cinnamon roll casserole recipe is the ultimate brunch dish, made with refrigerated cinnamon rolls, eggs, milk, a touch of maple syrup, and a drizzle of icing over the top. It's super easy to make and can even be assembled the night before.

Categories     Breakfast

Time 35m

Number Of Ingredients 8

4 tablespoons butter, melted
2 tubes refrigerated (16 cinnamon rolls), cut into about 8 pieces per roll (I always use Pillsbury brand.)
4 large eggs
1/2 cup milk
2 teaspoons vanilla
2 teaspoons cinnamon
1/4 cup maple syrup
icing from the cinnamon roll tubes

Steps:

  • Preheat oven to 375ºF. Pour butter into a 9×13 glass baking dish and spread evenly. Cut each cinnamon roll into 8 small pieces and layer evenly over the bottom of the dish. (I like to use kitchen shears or a pizza cutter to easily cut the cinnamon rolls.)
  • In a large liquid measuring glass or small bowl, whisk together eggs, milk, vanilla, and cinnamon. Make sure the egg is fully beaten within the milk. Pour egg mixture over the cinnamon rolls. Be sure the egg mixture is very evenly distributed. Drizzle syrup over egg mixture.
  • At this point, you can cover and refrigerate overnight or immediately bake the casserole. Bake at 375º for 20-25 minutes or until cinnamon rolls are golden brown.
  • Cool casserole for about 5 minutes. Remove covers from icing; microwave on medium (50%) 10 to 15 seconds or until thin enough to drizzle. Drizzle with icing, and enjoy!

Provided by GF member Sue Tappin

Categories     Dessert

Time 1h25m

Number Of Ingredients 10

3 large egg yolks (freeze the whites for another recipe)
2 tbsp caster sugar
2 tbsp custard powder
100ml whole milk
300ml single cream
1 tsp vanilla paste
320g ready-rolled puff pastry
50g unsalted butter, melted
50g granulated sugar
1 tbsp ground cinnamon

Steps:

  • Mix together the egg yolks, caster sugar, custard powder and milk in a bowl. Pour the cream into a saucepan set over a medium heat, bring to the boil, then gradually pour into the egg yolk mixture, whisking until smooth.
  • Pour the mixture back into the saucepan and cook over a low-medium heat for a few minutes, whisking all the time to keep it smooth. It should be very thick. Remove from the heat, then stir in the vanilla paste. Set aside to cool.
  • Heat the oven to 200C/180C fan/gas 4. Line a 28 x 18cm baking tray with baking parchment. Unroll the pastry sheet with the long edge closest to you. Cut it in half vertically, to make two rectangles that will fit the base of the tray. Put one sheet in the baking tray, prick all over with a fork, and bake for 15 mins. Remove from the oven and allow to cool for 5 mins.
  • Whisk the custard again briefly, then spread evenly over the cooled pastry. Lay the other pastry sheet on top, tucking in the edges. Brush with half the butter.
  • Mix the granulated sugar with the cinnamon, then sprinkle evenly over the pie. Drizzle over the remaining melted butter and bake for a further 35-45 mins until the custard has set and browned on top.
  • Remove from the oven and allow to cool in the tray, before cutting into bars to serve. Can be kept chilled for up to three days.

Tips:

  • For the best custard cinnamon rolls, use high-quality ingredients. This means using fresh milk, butter, and eggs, as well as good-quality cinnamon and vanilla extract.
  • Make sure your yeast is active before using it. To do this, dissolve it in warm water with a little sugar and let it sit for 5-10 minutes. If the yeast is active, it will foam up.
  • Knead the dough until it is smooth and elastic. This will help to develop the gluten in the dough, which will make the cinnamon rolls light and fluffy.
  • Let the dough rise in a warm place until it has doubled in size. This will take about 1-2 hours.
  • When rolling out the dough, be sure to roll it out evenly. This will help to ensure that the cinnamon rolls are all the same size and shape.
  • Sprinkle the dough with a generous amount of cinnamon sugar. This will give the cinnamon rolls their classic flavor.
  • Roll the dough up tightly and cut it into even pieces. This will help to ensure that the cinnamon rolls are all the same size and shape.
  • Place the cinnamon rolls in a greased baking dish and let them rise for another 30 minutes. This will help them to become even lighter and fluffier.
  • Bake the cinnamon rolls in a preheated oven until they are golden brown. This will take about 25-30 minutes.
  • Let the cinnamon rolls cool for a few minutes before frosting them. This will help the frosting to set.

Conclusion:

Custard cinnamon rolls are a delicious and indulgent treat that are perfect for any occasion. With their soft, fluffy dough, gooey custard filling, and sweet cinnamon flavor, they are sure to be a hit with everyone who tries them. Follow these tips and you'll be able to make perfect custard cinnamon rolls every time.
