Steps:
- For the sauce: Use cooking spray to coat the inside of an 8-inch springform pan. Spray the outside of a 3 1/2- to 3 3/4-inch-diameter ramekin and place it in the center of the springform pan. Set aside.
- Whisk together the ketchup, honey, curry powder and plenty of black pepper in a small saucepot. Bring to a simmer, then remove from the heat; set aside.
- For the rolls: Lightly dust your work surface and a rolling pin with flour. Unroll the puff pastry and roll out to a 14-by-9-inch rectangle. Dust the top all over with the curry powder. Using one frank as a guide, cut the pastry into strips slightly smaller than the franks, about 1 1/4-by-2 1/4 inches. Roll each frank in a piece of pastry and pinch the seam to close it.
- Preheat the oven to 425 degrees F.
- Starting with the outer circle and allowing some space between, place each pig in a blanket vertically in the prepared springform pan in two concentric circles. Chill for 30 minutes. Bake until the tops are golden, about 35 minutes, then cover loosely with foil and bake until the inner puff pastry is baked through, about 25 minutes more. Pour the sauce in the ramekin and serve.
CURRYWURST
When I used to I lived in Berlin, Germany, one of my favorite things to eat was currywurst and pomme frites. After I came back to the states, I created my own version, which is a pretty close second.-Julie Merriman, Seattle, Washington

CURRYWURST
Created in postwar Berlin in 1949, currywurst originated as a "poor man's steak," cobbled together using sausages, canned tomatoes and curry powder. Today, it's a popular street food across Germany, although how you enjoy it depends on the vendor and your preferences: The sausages can be served with or without skin, and you can request your currywurst sauce to be scharf (hot) or even extra-scharf. In traditional German currywurst sauces, tomatoes and vinegar provide acidity, sugar or juice lend sweetness and mild curry powder adds spice (although some adventurous cooks add other aromatics and spices, like mustard powder, hot chile or even lemongrass). This recipe, adapted from Alfons Schuhbeck's "The German Cookbook" (Phaidon, 2018), is a great introduction, not too spiced or too sweet, and can be customized according to taste.

Steps:
- Prepare the currywurst ketchup: In a large skillet, heat 1 tablespoon olive oil over medium. Add the onion and sauté, stirring occasionally, until softened, about 5 minutes. Add the brown sugar and cook, stirring occasionally, until the onion is caramelized, about 5 minutes. Stir in 1 tablespoon curry powder, paprika, cinnamon and chile and cook until just fragrant, about 1 minute. Stir in the tomato paste, then add the chopped tomatoes and their juices, stock and vinegar. Cook, stirring occasionally, until thickened, 10 to 15 minutes.
- Discard the cinnamon stick and chile de arbol, then transfer tomato mixture to a blender and purée until smooth. Blend in the remaining 3 tablespoons olive oil in a steady stream. Season to taste with salt. (This makes about 2 cups of sauce.)
- Meanwhile, using the tines of a fork, lightly poke a few holes in the skin of the sausages on all sides to allow air to escape as the sausages cook. Heat the neutral oil in a large skillet over medium heat. Add the sausages and pan-fry, rotating until lightly browned on all sides, about 8 to 10 minutes, depending on what type of sausage you select. Let rest for 5 minutes.
- Slice the sausages on an angle into thick coins, if desired, and divide the sausages among the plates. Transfer the curry sauce to a squeeze bottle and drizzle on top of the sausages (alternately, you can simply drizzle the curry sauce on top using a spoon). Sprinkle with additional curry powder, if desired, and serve with French fries.
CURRYWURST SAUCE
This is an adaptation of a recipe I found that has been changed to make it a little quicker and easier. It tastes just like the sauce served on the fried bratwurst at my favorite local German restaurant. Use hot curry powder if you like it a bit spicier or add some cayenne for a kick.

Steps:
- Put one cup of ketchup into a small saucepan on medium low heat. When nice and warm, drop in the 1/4 teaspoon of baking soda. This is really important: once you drop in the baking soda and start stirring, itÂs going to start to foam. You'Âll need to stir continuously until the foaming subsides. The ketchup should look almost exactly like normal ketchup again once you'Âre done. Reduce heat down to low. Add all the spices and stir. Add the liquids, combine thoroughly. Simmer on the stove for 5-10 minutes. Next up is the bratwurst. This recipe makes a lot of sauce, so pan fry up (or grill) as many bratwurst as you want for your meal. Serve with a sprinkling of curry powder on top.
Tips:
- Choose the right sausage: Traditionally, currywurst is made with a German sausage called "Bratwurst". Look for a sausage that is made with a blend of pork and beef, and that has a good amount of fat. This will help the sausage to stay juicy and flavorful when it is cooked.
- Use a good quality curry powder: The curry powder is what gives currywurst its distinctive flavor, so it is important to use a good quality powder. Look for a curry powder that is made with a blend of spices, including cumin, coriander, fenugreek, and turmeric.
- Don't be afraid to experiment: There are many different ways to make currywurst, so don't be afraid to experiment with different ingredients and flavors. You can add different spices to the curry sauce, or you can use different toppings, such as sauerkraut, onions, or pickles.
- Serve currywurst with your favorite sides: Currywurst is traditionally served with pommes frites (French fries) and a side of curry ketchup. However, you can also serve it with other sides, such as potato salad, coleslaw, or rice.
Conclusion:
Currywurst is a delicious and easy-to-make dish that is perfect for a quick and satisfying meal. With its unique flavor and variety of toppings, currywurst is a dish that everyone can enjoy. So next time you are looking for a new and exciting dish to try, give currywurst a try!
