CURRIED QUINOA SALAD WITH CRANBERRIES
You can only find quinoa in healthstores here. And not all quinoa products are (yet) available. But OK, when I found this recipe I was glad I could make it. Be sure to rinse the quinoa before boiling it. If you can't find quinoa you can use either couscous or bulgur.

Tips for Making Curry Quinoa with Almonds and Cranberries:
- Use a good quality curry powder. This will make a big difference in the flavor of the dish. Look for a curry powder that is made with a variety of spices, including cumin, coriander, turmeric, and fenugreek.
- Toast the quinoa before cooking it. This will give it a nutty flavor and make it more digestible. To toast the quinoa, simply heat it in a dry skillet over medium heat for a few minutes, stirring constantly.
- Use vegetable broth instead of water to cook the quinoa. This will add more flavor to the dish.
- Add the almonds and cranberries towards the end of cooking. This will prevent them from getting overcooked and losing their flavor.
- Serve the curry quinoa with your favorite toppings. Some suggestions include yogurt, cilantro, and lime wedges.
Conclusion:
Curry quinoa with almonds and cranberries is a healthy, delicious, and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover quinoa. The curry powder, almonds, and cranberries add a lot of flavor and texture to the dish. This recipe is sure to be a hit with your family and friends.
