1 teaspoon freshly squeezed lime juice
1/4 teaspoon coarse salt
Pinch of ground pepper

  • In a food processor, combine mayonnaise, chutney, curry powder, and lime juice; season with salt and pepper. Process until smooth.

2 tsp minced onion
1 Tbsp hot curry powder
1 tsp grated fresh ginger
1 tsp toasted cumin seeds, ground
1/2 tsp ground turmeric
1 pinch cayenne pepper
ground white pepper, to taste
1 c real mayonnaise (not salad dressing)

Steps:

  • 1. Heat oil in a small saute pan over medium-low heat. Add onion and cook until it is limp, about 7 minutes, stirring frequently. Add spices and pepper totaste. Cook, stirring constantly, for 2 minutes. Remove from heat and let cool.
  • 2. Put mayonnaise in a small bowl and fold in spice mixture. Refrigerate, covered, until well chilled.

1 cup chopped fresh cilantro, divided
6 tablespoons coarsely chopped lightly salted peanuts, divided
1 1/3 cups coleslaw mix (preferably green and red cabbage with carrots) without dressing, divided
