Tips:

  • For succulent chicken, use a whole chicken cut into 8 pieces. Chicken on the bone adds flavor to the gravy. However, boneless, skinless chicken breasts or thighs can be used if preferred.
  • To make the chicken more flavorful, marinate it in a mixture of yogurt, ginger-garlic paste, cumin, coriander, and turmeric for at least 30 minutes before cooking.
  • Use a heavy-bottomed pot or Dutch oven to cook the chicken. This will help distribute the heat evenly and prevent the chicken from sticking.
  • Brown the chicken in batches in a little oil over medium heat. Don't overcrowd the pot, or the chicken will steam instead of brown.
  • Once the chicken is browned, remove it from the pot and set aside. Then, add the onions and cook until softened. Add the ginger and garlic and cook for a minute more.
  • Add the spices and cook for a minute, stirring constantly. Then, add the tomatoes and cook until they are softened and pulpy.
  • Add the chicken back to the pot, along with the coconut milk and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the chicken is cooked through.
  • Serve the chicken curry with rice, naan, or roti.

Conclusion:

This curry chicken in gravy is a delicious and versatile dish that can be enjoyed with a variety of sides. The chicken is tender and flavorful, and the gravy is rich and creamy. Whether you are a fan of Indian food or just looking for a new and exciting dish to try, this curry chicken recipe is sure to please.
