TROPICAL CURRY

Tropical Curry image

This is a lovely curry, full of meat and fruit. It is unusual but oh so yummy. It's always best eaten the next day. It comes from Indonesia, where the lady that gave me the recipe says she makes it up and then sits it on her windowsill for a day for the flavours to meld. I like to eat it straight away, but leftovers are definitely better. I hope you enjoy it :)

Tips:

  • Choose high-quality ingredients. Fresh nuts, flavorful spices, and aromatic herbs will make all the difference in the final dish.
  • Toast the nuts before adding them to the mix. This will enhance their flavor and make them more crunchy.
  • Use a light hand with the salt. Too much salt can overpower the other flavors in the mix.
  • Store the nut mix in an airtight container in a cool, dry place. It will keep for up to 2 weeks.
