Number Of Ingredients 10

2 tablespoons unsalted butter
1 small onion, finely chopped
3 tablespoons curry powder
1 tablespoon sweet paprika
2 1/4 cups canned Italian plum tomatoes, pureed with their juice
2 cups garlic broth (see recipe)
1 tablespoon salt
1 tablespoon fresh lemon juice
Freshly ground black pepper to taste
8 tablespoons plain yogurt

Steps:

  • In a medium saucepan, melt the butter over low heat. Stir in the onion, and cook until the onion is limp and completely translucent, about 10 minutes. Stir in the curry powder and the paprika, and cook, stirring constantly, for 3 minutes.
  • Stir in the tomato sauce and broth. Bring to a boil. Lower the heat, and simmer for 5 minutes. Stir in the salt. The soup can be made ahead up to this point. Refrigerate for 2 hours or overnight if serving cold, or reheat.
  • Stir in lemon juice and pepper. Top each serving with 2 tablespoons of the yogurt.

1 can undiluted tomato soup
1 package unflavored gelatin
1/4 cup water
1 cup mayonnaise
8 ounces cream cheese
1 can small shrimp
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped green pepper
1/2 teaspoon horseradish (optional)

Steps:

  • Heat soup to boiling.
  • Dissolve gelatin in the 1/4 cup cold water and add to soup.
  • Mix together the cheese and mayonnaise, and add to soup mixture and mix well.
  • Add remaining ingredients.
  • Pour into a well greased mould, and put in the refrigerator.
  • Unmould and serve with your favorite crackers.

1 tablespoon canola oil
1 can (10-3/4 ounces) condensed cream of shrimp soup, undiluted
1 teaspoon curry powder
1 package (1 pound) frozen uncooked small shrimp, thawed, peeled and deveined
1 cup sour cream
Hot cooked rice

Steps:

  • In a large saucepan, saute onion in oil until tender. Stir in soup and curry powder; bring to a boil. Add the shrimp; cook and stir until shrimp turn pink. Reduce heat. Stir in sour cream; heat through. Serve with rice.

This is a soup I came up with while on the HCG diet. It's perfectly delicious and perfectly HCG legal. :) I drop lots of weight eating shrimp on the diet & always need new flavors so I don't get bored. This is one of my favorites!

100 g shrimp (I use precooked just for ease)
2 roma tomatoes
1 teaspoon minced garlic clove
1/2 teaspoon ground cinnamon
1/2 teaspoon curry powder
1/2 cup fat-free chicken broth

Steps:

  • Heat spices & minced garlic in a saute pan just a little.
  • Splash a little chicken stock into the pan & mix with the spices.
  • Add chopped tomatoes and cook down a bit. Can splash a little more chicken stock in at this point. (I use approximately 1/2 cup chicken stock total).
  • Allow to simmer so the tomatoes break apart and cook down.
  • Add the shrimp and simmer until shrimp is hot.
  • Eat and enjoy!
