SHRIMP IN YELLOW CURRY

Shrimp in Yellow Curry image

Many Thai dishes are not unlike what we call curries, but although they may contain curry powder, they are more often based on a combination of herbs and aromatic vegetables, rather than dried spices. A typical curry might feature a mixture of garlic, shallots, chiles, lime leaf, sugar and galangal (or ginger). This simplified version leaves out the lime leaf and sugar, but benefits from the addition of a couple spoonfuls of fish sauce at the end of cooking. It is brightly flavored, but blessedly easy to toss together on a weeknight.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients and equipment ready. This will help you stay organized and avoid scrambling.
  • Use Fresh Seafood: The fresher your seafood, the better your dish will taste. If possible, buy seafood that was caught or harvested the same day you plan to cook it.
  • Don't Overcook the Seafood: Seafood cooks quickly, so be careful not to overcook it. Otherwise, it will become tough and rubbery.
  • Use a Variety of Vegetables: This recipe calls for a variety of vegetables, but you can use any vegetables that you like. Just make sure to cut them into bite-sized pieces so that they cook evenly.
  • Make Sure the Curry Paste is Fully Dissolved: When you add the curry paste to the pan, make sure to stir it constantly until it is fully dissolved. This will help to prevent the curry from clumping.
  • Add the Coconut Milk Slowly: When you add the coconut milk to the pan, do it slowly and stir constantly. This will help to prevent the coconut milk from curdling.
  • Serve with Rice: This dish is traditionally served with rice. However, you can also serve it with noodles or quinoa.

Conclusion:

This curried seafood and vegetables over rice is a delicious and easy-to-make dish that is perfect for a weeknight meal. The curry paste gives the dish a rich and flavorful sauce, and the vegetables add a healthy dose of nutrients. Serve this dish with rice and a side of naan bread for a complete meal.
