2 celery ribs, chopped

1 can (13.66 ounces) light coconut milk
1 medium potato (about 8 ounces), peeled and chopped

Steps:

  • In a large saucepan, heat oil over medium heat. Add celery and carrots; cook and stir 6-8 minutes or until tender. 1 tablespoon Madras curry powder
2 cloves garlic, finely chopped
1 carrot, sliced into rounds
1 stalk celery, sliced
Kosher salt and freshly ground black pepper
4 cups low-sodium chicken broth
2 1/2 cups shredded cooked chicken
1 cup cooked basmati or jasmine rice
Zest and juice of 1/2 a lime
2 tablespoons chopped fresh cilantro, plus leaves, for serving

Steps:

1 1/2 cups water
3/4 cup instant brown rice, uncooked

1 bay leaf

6 cups low-sodium chicken broth

1 1/2 teaspoons Madras curry powder
1/3 cup jasmine rice
3 tablespoons finely chopped fresh mint
3 tablespoons chopped fresh dill

I used half milk and half cream once and got a very nice creamy soup, but some may prefer the thinner consistency of using only milk.
