1 onion, chopped
2 garlic cloves, chopped
8 ounces firm tofu
15 ounces pink beans
15 ounces whole kernel corn
15 ounces diced tomatoes

Steps:

  • Use fresh ingredients: Fresh vegetables, herbs, and spices will give your pilaf the best flavor. If you can, try to buy organic ingredients whenever possible.
  • Don't overcook the rice: Rice should be cooked until it is tender but still has a slight bite to it. Overcooked rice will be mushy and bland.
  • Use a good quality curry powder: The curry powder is one of the most important ingredients in this pilaf, so be sure to use a good quality brand. Look for a curry powder that is made with a variety of spices, including cumin, coriander, turmeric, and fenugreek.
  • Adjust the heat to your liking: This pilaf can be made mild, medium, or spicy, depending on your preference. If you like spicy food, add more chili powder or cayenne pepper. If you prefer a milder pilaf, omit the chili powder or cayenne pepper.
