1 cup water
1 tablespoon dried minced onion
1 cube chicken bouillon
½ teaspoon garlic powder
¼ teaspoon dried rosemary
¼ teaspoon dried thyme
¼ teaspoon salt
3 tablespoons coconut oil
2 tablespoons curry powder
½ teaspoon ground red pepper (cayenne), or more to taste

2 tablespoons vegetable oil
4 garlic cloves, minced
3 tablespoons Red Curry Paste for Thai Pork and Noodles
12 ounces ground pork
3/4 cup homemade or low-sodium store-bought chicken stock
1/4 cup canned unsweetened coconut milk
3 fresh or frozen kaffir lime leaves
2 tablespoons Asian fish sauce
1 teaspoon palm or granulated sugar

Fresh purple, Thai, or regular basil leaves; fresh bean sprouts; and lime wedges, for garnish

Tips:

  • Prep Ingredients: Before starting, make sure all ingredients are prepped and measured. This will help streamline the cooking process.
  • Use Fresh Aromatics: Freshly chopped garlic, ginger, and lemongrass add vibrant flavors to the dish. Don't substitute with pre-packaged or powdered options.
  • Adjust Curry Paste: If you prefer a milder or spicier curry, adjust the amount of curry paste accordingly. Start with a small amount and gradually increase to taste.
  • Coconut Milk Consistency: For a richer and creamier curry, use full-fat coconut milk. If you prefer a lighter version, dilute it with some water.
  • Simmer for Flavor: Simmer the curry for at least 15-20 minutes to allow the flavors to fully develop and meld together.
  • Balance Flavors: Taste the curry and adjust seasonings as needed. Add a bit of lime juice or sugar to balance the flavors.
  • Serve with Accompaniments: Serve the curried noodles with traditional accompaniments like crispy shallots, roasted peanuts, and a wedge of lime.
