ROASTED JERUSALEM ARTICHOKES (OR SUNCHOKES)

Roasted Jerusalem Artichokes (or Sunchokes) image

This is a super-easy way to cook these vegetables if you've never tried them before and by far my favorite. Jerusalem artichokes, or sunchokes, are starchy tubers like potatoes and turnips. When roasted, the skin becomes flaky and the flesh becomes tender, but the taste of a sunchoke is slightly nutty and sweet. Cooked sunchokes are best when eaten within 2 days. When raw, they store well in your fridge's vegetable bin, wrapped loosely in a paper towel. Enjoy!

Jerusalem Artichokes or Sun Chokes Au Gratin (Topinambours Au Gratin) image

Provided by Craig Claiborne

Categories     dinner, side dish

Time 45m

Yield 6 servings

Number Of Ingredients 12

1 pound Jerusalem artichokes, 8 to 10
Salt to taste, if desired
4 tablespoons butter
4 tablespoons flour
1 1/2 cups milk
Freshly ground pepper to taste
1/8 teaspoon freshly grated nutmeg
2 tablespoons finely chopped onion
1/4 cup heavy cream
Pinch of cayenne pepper
1 cup grated Swiss or Gruyere cheese
1 egg yolk

Steps:

  • Preheat the broiler.
  • Using a small regular or swivel-bladed paring knife, peel the artichokes. If the artichokes are very large, cut them in half. Ideally, the artichokes or pieces of artichoke should be of uniform size or the size of the smallest whole artichoke.
  • Put the artichokes in a saucepan. Add cold water to cover and salt to taste. Bring to the boil. Let simmer about 10 to 15 minutes or until tender but still a little crisp. Drain well.
  • Meanwhile, melt three tablespoons of the butter in a saucepan and add the flour, stirring with a wire whisk. Add the milk, stirring rapidly with the whisk. Add salt, pepper and nutmeg.
  • Cut the hot artichokes into not-too-small bite-size cubes or wedges. There should be about two cups.
  • Heat one tablespoon of butter in a saucepan and add the onion. Cook until wilted. Add the artichoke pieces, cream and cayenne. Bring to a boil and add the white sauce. Blend well. Bring to a simmer. Add three-quarters cup of the grated cheese and stir until melted. Add the egg yolk and let simmer about 15 seconds.
  • Pour and scrape the mixture into a baking dish. Sprinkle with the remaining cheese.
  • Place under the broiler and let stand until bubbling and nicely glazed on top.

PAN-FRIED JERUSALEM ARTICHOKES IN SAGE BUTTER

Yield Makes 4 to 6 servings

Number Of Ingredients 6

3 tablespoons butter, divided
2 tablespoons olive oil
1 pound Jerusalem artichokes,* scrubbed, cut crosswise into 1/4-inch-thick rounds
3 tablespoons coarsely torn fresh sage leaves, divided
2 teaspoons fresh lemon juice
2 tablespoons chopped fresh Italian parsley

Steps:

  • Melt 1 tablespoon butter with olive oil in large nonstick skillet over medium-high heat. Add Jerusalem artichokes and half of sage. Sprinkle with salt and pepper. Sauté until brown and just beginning to soften, turning frequently, about 10 minutes. Using slotted spoon, transfer Jerusalem artichokes to shallow serving bowl. Add remaining 2 tablespoons butter and sage to skillet; fry until sage darkens and begins to crisp, about 30 seconds. Add lemon juice; simmer 1 minute. Pour lemon-sage butter over Jerusalem artichokes in bowl, tossing to coat. Season with salt and pepper. Sprinkle with parsley.

Tips:

  • Choose firm and unblemished Jerusalem artichokes. Avoid any that are soft or have dark spots.
  • Peel the Jerusalem artichokes thinly. This will help to remove the tough outer skin and make them more tender.
  • Soak the Jerusalem artichokes in water for 10 minutes before cooking. This will help to remove any excess starch and prevent them from turning brown.
  • Cook the Jerusalem artichokes until they are tender but still hold their shape. Depending on the size of the artichokes, this will take about 15-20 minutes.
  • Add the curry powder and other spices towards the end of cooking. This will help to preserve their flavor and prevent them from becoming bitter.
  • Serve the curried Jerusalem artichokes hot, garnished with chopped parsley or cilantro.

Conclusion:

Curried Jerusalem artichokes are a delicious and versatile dish that can be enjoyed as a side dish or main course. They are a good source of fiber, potassium, and vitamin C, and they have a slightly sweet and nutty flavor. With their unique flavor and texture, curried Jerusalem artichokes are a great way to add some variety to your meals.
