1 onion, chopped
3 cloves garlic, finely chopped
1 jalapeno pepper, chopped
1 can (15 oz.) garbanzo beans, drained
1 can (15 oz.) chopped tomatoes with juices
1/4 c. kalamata olives, chopped
2 tablespoons capers
1/2 c. dry red wine
1 teaspoon dried basil
1 teaspoon oregano
2 tablespoons curry powder
salt and pepper to taste

Steps:

  • Heat olive oil in a 12-inch heavy, deep skillet over moderately high heat until hot but not smoking, then saute onion and garlic, stirring until onion is soft, about 3 minutes. 2 tablespoons yellow curry powder
2 (14 ounce) cans vegetable broth
3 large Yukon Gold potatoes, chopped
2 (10 ounce) packages frozen cooked yellow squash
½ head cauliflower, chopped into bite size pieces
2 (15 ounce) cans garbanzo beans
1 (8 ounce) container plain yogurt
cilantro leaves, for garnish
