CURRIED EGG SANDWICHES

I remember when I was young, my older sister would make these for me at lunch. I think it was all she could make back then! Now all these years later, I love them, as so do my kids. And as a true blue aussie I still use Keen's Curry Powder, it just seems to bring back a little nostalgia when I see the Keens tin !

Tips:

  • Use fresh, high-quality eggs for the best flavor and texture.
  • Hard-boil the eggs perfectly by placing them in a single layer in a saucepan, covering them with cold water, and bringing them to a boil. Then, remove the saucepan from heat, cover it, and let the eggs stand in the hot water for 10-12 minutes. Drain the hot water and immediately transfer the eggs to a bowl of ice water to stop the cooking process.
  • Use a food processor or blender to make the curry paste. This will help to create a smooth and flavorful paste.
  • If you don't have a food processor or blender, you can also grate the ginger, garlic, and onion by hand.
  • Be sure to toast the bread before assembling the sandwiches. This will help to keep the sandwiches from getting soggy.
  • Serve the sandwiches immediately, or wrap them in plastic wrap and store them in the refrigerator for later.

Conclusion:

Curried egg sandwiches are a delicious and easy-to-make breakfast, lunch, or snack. They are perfect for busy mornings or for packing in a lunch box. With a few simple ingredients and a little bit of time, you can create a flavorful and satisfying sandwich that the whole family will enjoy.
