Categories     Salad

Time 25m

Number Of Ingredients 7

6 eggs (room temperature)
1/3 cup mayonnaise (or more for extra creaminess)
1/2 cup grated carrot (from one small carrot)
1 green onion (sliced)
1 teaspoon curry powder
salt and pepper (to taste)
2 tbs chopped parsley (for garnish)

Steps:

  • Bring a pot of water to a boil. Then turn the heat to low so there's no bubbles. Use a skimmer to slowly and gently place the eggs in the pot. Turn the heat back to high and boil the eggs for 12-14 minutes.
  • Transfer the eggs to an ice water bath for a few minutes to stop the cooking process and cool.
  • Once your eggs are cool to touch, peel and discard the eggs shells.
  • Cut the hard boiled eggs to your desired size (I prefer chunky).
  • Add the eggs, mayonnaise, grated carrots, green onion, curry powder, salt and pepper to bowl and stir all ingredients together. Sprinkle with parsley.
  • Serve on its own or in a wrap or sandwich and enjoy!

CURRIED EGG SALAD

Curried Egg Salad image

Here is a recipe our colleague Jeff Gordinier got from the New York chef Jesse Schenker in the process of writing an article about Mr. Schenker's efforts to lose weight. It is for a much lighter version of the egg salad you may ordinarily make, with Greek yogurt standing in for mayonnaise and a number of egg yolks held back from the finished dish. But it is important to note that you don't have to do that. You can make this dish with all the yolks if you like, and pile the result into the midst of a green salad or on top of a roll, and you'll have a fine meal indeed.

Categories     easy, lunch, quick, main course

Time 10m

Yield About 1 cup

Number Of Ingredients 9

4 hard-boiled eggs, peeled
1 teaspoon plain 2-percent-fat Greek yogurt
1/4 teaspoon extra virgin olive oil
2 teaspoons lemon juice, or to taste
1/2 teaspoon finely grated lemon zest
1/2 teaspoon sriracha, or to taste
1/4 teaspoon sherry vinegar, or to taste
1/3 teaspoon curry powder, or to taste
Kosher salt

Steps:

  • In a mixing bowl, combine one of the eggs with the whites of the three remaining eggs. (Discard the three yolks or reserve for another use.)
  • Using a fork, chop or lightly mash the eggs. Add the yogurt, olive oil, lemon juice, lemon zest, sriracha, vinegar and curry powder. Season with a pinch of kosher salt.
  • Mix well and adjust seasonings as needed. If desired, spread egg salad on any healthful fiber cracker with single-digit carbohydrates per serving (in grams), and top with sliced cucumber.

EGG SALAD SANDWICH

Egg Salad Sandwich image

A round loaf of bread instantly elevates this Egg Salad Sandwich, making it the perfect dish to serve at your next picnic.

Provided by Martha Stewart

Categories     Food & Cooking     Lunch Recipes

Number Of Ingredients 10

6 hard-boiled eggs, peeled and roughly chopped
1/4 cup Homemade Mayonnaise, or prepared mayonnaise, plus more for spreading
1/2 teaspoon dry mustard powder, or 3/4 teaspoon Dijon mustard
3 tablespoons diced celery
Salt and freshly ground black pepper
1/4 teaspoon mild Madras curry powder, (optional)
1 8-inch round bread loaf, cut in half crosswise
Dijon mustard for spreading (optional)
1 small head radicchio
1 small bunch arugula

Steps:

  • In a medium bowl, combine eggs, mayonnaise, mustard powder, celery, salt and pepper to taste, and curry powder, if using. Gently mix until combined.
  • Spread the inside of the bread halves with a layer of mayonnaise and mustard, if using. Line the bottom half with radicchio and arugula leaves, and top with the egg salad. Cover with the top half, and cut the sandwich into wedges. Serve immediately.

Tips:

  • For the perfect egg salad, use hard-boiled eggs that are fresh and have been properly cooked. Overcooked eggs will be dry and crumbly, while undercooked eggs will be runny and unsafe to eat.
  • To easily chop the eggs, use a sharp knife or an egg slicer. If you use a knife, be sure to cut the eggs in a criss-cross pattern so that they are evenly chopped.
  • For a creamier egg salad, mash the eggs with a fork instead of chopping them. This will help to break down the eggs and make them more smooth and spreadable.
  • Add your favorite mix-ins to the egg salad to customize it to your taste. Some popular additions include celery, onion, pickle relish, and chopped herbs. Fresh dill, dijon mustard, or a squirt of lemon juice can also add a nice flavor.
  • Serve the egg salad on your favorite bread or crackers. Some popular options include white bread, wheat bread, sourdough bread, and rye bread. For a healthier option, try serving the egg salad on whole-wheat bread or a lettuce wrap.

Conclusion:

Curried egg salad is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is also a great way to use up leftover hard-boiled eggs. With its creamy texture and flavorful curry dressing, curried egg salad is sure to be a hit with everyone who tries it. So next time you are looking for a quick and easy meal, give curried egg salad a try. You won't be disappointed!
