CURRIED CORN SALAD

Curried Corn Salad image

This is a delicious side with chicken or pork. I love how the flavors mix together. Although this is a side dish, it is my favorite part of any meal it is served with. I could sit and eat a bowl of this with just a bit of bread to go with it. This was originally a Fit for Life recipe, but my mom made some alterations to it.

Curried Corn Salad in Avocado Boats-Annette's image

We love to eat curry any way we can. I came up with this recipe in the summer time using fresh corn on the cob but then adjusted it to use frozen sweet corn so it can be made year round. It is fresh and full of flavor. The sweet corn, curry and cilantro make it taste earthy and clean. It's great as a side dish with hamburgers,...

Time 10m

Number Of Ingredients 11

1 pkg frozen corn, thawed
1 large red bell pepper, chopped
1 bunch green onions, chopped
1/3 c mayonnaise
1/3 c sour cream
3 Tbsp cilantro, chopped
1 Tbsp mango chutney
1 tsp curry powder
1/2 tsp salt
1/2 tsp black pepper
4 avocados

Steps:

  • 1. In a bowl, combine mayonnaise, sour cream, mango chutney, curry powder, salt, and black pepper. Stir well.
  • 2. Add corn, red bell pepper, and red onion. Stir to coat.
  • 3. Cut avocados in half and salt and pepper to taste. Scoop even amounts of the mixture into each avocado half and sprinkle with cilantro. Enjoy!
  • 4. ***The idea is to eat them sort of like a grape fruit. Scoop down into the avocado and pull up some of the flesh along with the curried corn salad. YUM!***

Tips:

  • Fresh is Best: For the best flavor and texture, use fresh corn kernels. If fresh corn is unavailable, frozen or canned corn can be used, but be sure to drain them well before adding them to the salad.
  • Choose the Right Curry Powder: The type of curry powder used will have a significant impact on the flavor of the salad. For a mild flavor, use a mild curry powder. For a more intense flavor, use a medium or hot curry powder.
  • Spice It Up: If you like a little heat in your salads, add a pinch of cayenne pepper or chili powder to the dressing.
  • Add Some Crunch: For a crunchy texture, add some chopped celery, red onion, or bell pepper to the salad.
  • Serve Immediately or Refrigerate: This salad is best served immediately after it is made, but it can also be refrigerated for later. If refrigerating, be sure to let the salad come to room temperature before serving.

Conclusion:

Curried corn salad is a delicious and refreshing side dish that is perfect for summer gatherings. With its vibrant colors and bold flavors, this salad is sure to be a hit. So next time you're looking for a new and exciting salad recipe, give curried corn salad a try. You won't be disappointed!
