Time 2h5m

Yield 4 to 6 servings

Number Of Ingredients 14

1 tablespoon butter
2 medium carrots, roughly chopped
2 stalks celery, roughly chopped
1 red onion, roughly chopped
5 cloves garlic, roughly chopped
3 tablespoons curry powder
2 tablespoons ground turmeric
2 bay leaves
4 cups chicken stock
5 sprigs thyme
2 tablespoons canola or rice bran oil
1 (3-pound) cod fillet (from the thickest part of the fillet), cut into 5-ounce pieces
1 1/2 cups basmati rice
1/4 cup raisins

Steps:

  • Melt the butter in a medium saucepan set over medium heat. Add the carrots, celery, onion, and garlic and cook until the vegetables are softened; a little browning is okay. Add the curry powder, turmeric, and bay leaves and stir until the vegetables become pasty and coated with the spices. Add the stock and thyme. Bring to a boil, reduce the heat, and simmer the curry broth for 1 hour.
  • Heat the oil in a large skillet set over medium-high heat. Sear the cod pieces until one side is crispy. Pour 2 cups of the curry broth into the pan, reduce the heat, and simmer until the fish is cooked through.
  • Measure the remaining curry broth in a liquid measure and add enough water to come to 3 cups. Pour the liquid into a saucepan and add the rice and raisins. Bring to a boil, cover, reduce the heat to a simmer, and cook for 20 minutes.
  • To serve, make a bed of rice in a soup plate, set a piece of fish on top, and spoon in some of the broth.

Time 1h35m

Yield 6 servings

Number Of Ingredients 13

1 cup basmati, jasmine or jasmati rice
1/3 cup golden raisins
Grated zest and juice of 1 lemon
1/4 cup chopped fresh chervil
1/4 cup chopped fresh basil
1/4 cup chopped fresh parsley
1/4 cup chopped fresh cilantro
1 medium carrot, grated
1 3.5-ounce package pea shoots
3 tablespoons rice vinegar
2 teaspoons sugar
Kosher salt and freshly ground pepper
1/3 cup extra-virgin olive oil

Steps:

  • Cook the rice as the label directs. Spread out on a baking sheet and let cool completely. Soak the raisins in the lemon juice in a cup, 10 minutes. Meanwhile, toss the rice with the chervil, basil, parsley, cilantro and carrot in a large bowl. Chop the pea shoots, reserving some whole for garnish, and add to the bowl. Drain the raisins, straining the lemon juice into a separate bowl. Add the vinegar, lemon zest, sugar, 1/4 teaspoon salt, and pepper to taste to the lemon juice. Whisk in the olive oil. Add to the rice mixture along with the raisins and toss. Season with salt and pepper. Top with the reserved pea shoots.

CURRIED RICE WITH RAISINS

Curried Rice With Raisins image

My friend Cara and I needed a side dish one night and all I could think of was a curry dish I'd had at a local (Manhattan) Tai resturant. I could not find anything that was exactly right in the recipes already posted so I made this up. It was soooooooo good I now have to make it everytime we have dinner!!

Time 20m

Yield 4 serving(s)

Number Of Ingredients 8

1 medium onion (valencia or sweet mayan)
4 tablespoons butter (salted)
3/4 cup raisins (any variety)
3 teaspoons curry powder (I used a mix of mild and medium)
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup basmati rice (uncooked)
2 cups water

Steps:

  • Cook rice in 2 cups of water. Basmati rice is hard to ruin. It cooks fast and is exactly 2 to one ratio water to rice. 1 cup uncooked Basmati will take 10 to 20 minutes to cook.
  • While rice is cooking melt butter in skillet.
  • Chop onion and saute in butter until translucent.
  • Add curry, raisins, salt and pepper, cover and simmer on low heat until rice is finished or about 5 minutes.
  • If rice pan is large enough, mix it around with a wooden spoon to losen then pour mixture in skillet over the top. If not, transfer rice and curry mix to a larger bowl.
  • Mix well and enjoy.

Tips:

  • To achieve the best flavor, use fresh cod fillets and high-quality ingredients.
  • Do not overcook the cod, as it will become tough and dry. It is best to cook it until it is just opaque in the center.
  • If you don't have a tandoori oven, you can still make this dish in a regular oven. Just preheat the oven to 400°F (200°C) and bake the fish for 15-20 minutes, or until cooked through.
  • You can adjust the heat level of the curry by adding more or less chili powder.
  • For a vegetarian version of this dish, you can substitute tofu or paneer for the cod.
  • To make the geel rys, be sure to rinse the rice thoroughly before cooking. This will help to remove any excess starch and prevent the rice from becoming sticky.
  • Feel free to add other vegetables to the geel rys, such as carrots, peas, or green beans.
  • Serve the curried cod with a dollop of yogurt or raita for a refreshing touch.

Conclusion:

Curried cod with geel rys is a delicious and flavorful dish that is sure to impress your guests. The cod is cooked to perfection in a rich and creamy curry sauce, and the geel rys is a perfect accompaniment. This dish is easy to make and can be tailored to your own taste preferences.
