Categories     Chicken

Time 7h30m

Number Of Ingredients 7

8 bone-in chicken thighs
2 tsp olive oil
6 carrots, cut in 2-inch chunks
1 medium sweet onion, cut in wedges
1 c unsweetened coconut milk
1/4 c mild (or hot) curry paste.....your choice
OPTIONAL: CHOPPED PISTACHIOS, GOLDEN RAISINS, CILANTRO AND/OR CRUSHED RED PEPPER FLAKES

Steps:

  • 1. Trim excess skin and fat from chicken. In a 12-inch skillet cook chicken, skin side down, in hot olive oil for 8 minutes, or until browned. (Do not turn thighs). Remove from heat; drain and discard fat.
  • 2. In a slow cooker combine carrots and onion. In a bowl, whisk together half of the coconut milk and the curry paste; pour over carrots and onion (refrigerate remaining coconut milk). Place chicken, skin side up, on vegetables. Cook on HIGH for 3 1/2 to 4 hours, or on LOW for 7 to 8 hours.
  • 3. Remove chicken to platter. Skim off excess fat, then stir in remaining coconut milk. Top each serving with your choice of pistachios, raisins, cilantro, and/or crushed red pepper flakes. Enjoy!

Tips:

  • Use a variety of spices. Curry powder is a blend of spices, but you can also add other spices to your stew to give it more flavor. Some good options include cumin, coriander, turmeric, and chili powder.
  • Don't be afraid to use heat. Curry is a spicy dish, so don't be afraid to add some heat to your stew. You can do this by using spicy peppers, chili powder, or cayenne pepper.
  • Use fresh ingredients. Fresh ingredients will give your stew the best flavor. If you can, use fresh vegetables, herbs, and spices.
  • Simmer the stew for a long time. The longer you simmer the stew, the more flavorful it will be. Simmer the stew for at least 1 hour, or longer if you have time.
  • Serve the stew with rice or bread. Curry is typically served with rice or bread. This will help to soak up the delicious sauce.

Conclusion:

Curried chicken stew is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover chicken. With a few simple ingredients and a little bit of time, you can make a delicious and flavorful curry that the whole family will enjoy.
