3 whole (6 split) chicken breasts, bone-in, skin-on
Olive oil
Kosher salt and freshly ground black pepper
1 1/2 cups good mayonnaise (recommended: Hellman's)
1/3 cup dry white wine
1/4 cup chutney (recommended: Major Grey's)
3 tablespoons curry powder
1 cup medium-diced celery (2 large stalks)
1/4 cup chopped scallions, white and green parts (2 scallions)
1/4 cup raisins
1 cup whole roasted, salted cashews

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the chicken breasts on a sheet pan and rub the skin with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until the chicken is just cooked. Set aside until cool enough to handle. Remove the meat from the bones, discard the skin, and dice the chicken into large bite-size pieces.

Curried Chicken:
3-4 chicken breast halves
1 cup seedless grapes
1/2 cup walnuts
1 tsp. curry powder
1 T. freshly grated ginger
1/4 tsp. pepper
1/2 cup mayonnaise
1 tbsp. lemon juice
1/4 cup sour cream
romaine lettuce
Dressing:
1/3 cup sugar
1 tsp. salt
1 tsp. dry mustard
1/3 cup tarragon vinegar
2 tsp. onion juice
1 cup olive oil
1 1/2 T. poppy seeds

Steps:

  • Place chicken in saucepan and boil until done, about 20-30 minutes. Let cool and cut into bite size pieces. Place chicken pieces in bowl and add curry powder, pepper and lemon juice and toss lightly; refrigerate until cold. Combine grapes, walnuts, ginger, mayonnaise and sour cream and add to cooled chicken and mix well. Refrigerate until ready to serve. Dressing Preparation: Combine sugar, salt, mustard and vinegar to a saucepan and boil to dissolve sugar. Cool. Add the onion juice and oil slowly and whisk until well blended. Stir in poppy seeds. Makes 1 1/2 cups. Tear or cut romaine into bite size pieces and put on plate. Put a scoop of chicken salad in the middle of the lettuce and drizzle with the poppy seed dressing.
