Tips:

  • Prep in advance: Marinating the chicken overnight allows the flavors to permeate deeply, resulting in incredibly tender and flavorful meat.
  • Use a flavorful yogurt marinade: The combination of yogurt, spices, and herbs in the marinade not only tenderizes the chicken but also infuses it with a delectable taste.
  • Sear the chicken before baking: Before placing the chicken in the oven, sear it in a pan to create a crispy outer layer that locks in the juices and prevents the chicken from drying out.
  • Use a variety of spices: The recipe calls for a blend of spices that complement each other perfectly, creating a warm and aromatic curry flavor. Feel free to adjust the spices according to your taste preferences.
  • Don't overcrowd the pan: When searing the chicken, make sure not to overcrowd the pan. This will prevent the chicken from cooking evenly and may result in steamed rather than seared chicken.
  • Use a good quality curry paste: The curry paste is a key ingredient in this recipe, so make sure to use a high-quality paste that is flavorful and aromatic.
  • Serve with your favorite sides: Curried chicken legs pair well with various sides such as steamed rice, quinoa, or roasted vegetables. You can also serve it with a dollop of yogurt or sour cream.
