CHICKEN CURRY PUFFS

These oven-baked beauties are great as appetizers or a snack. They're spicy and savory, with a subtle coconut milk base. In Malaysia, they are traditionally deep fried. But here's a modern version. You can wrap them in different ways - as rolls, sealed pockets or semi-open bundles.

Time 1h45m

Yield 9

Number Of Ingredients 13

1 tablespoon vegetable oil
½ teaspoon ground coriander
½ teaspoon ground turmeric
½ teaspoon ground cumin
2 teaspoons curry powder
½ cup coconut milk, or more as needed
2 red onions, chopped
1 stalk lemon grass, thinly sliced
1 red chile pepper, roughly chopped
1 large russet potato, diced
¾ pound skinless, boneless chicken breast, cut in bite-sized pieces
1 teaspoon salt
1 (17.25 ounce) package frozen puff pastry, thawed

Steps:

  • Heat vegetable oil in a saucepan over medium-low heat. Stir in coriander, turmeric, cumin, and curry powder. Cook a few seconds until fragrant. Pour in coconut milk, onions, lemon grass, and red pepper; cook until the vegetables are tender, about 7 minutes. Stir in potato and continue cooking for 12 minutes, adding more coconut milk if the mixture becomes too dry. Stir in the chicken, then season with salt. Cook and stir until chicken and potato has absorbed most of the liquid, then spread mixture on a plate to cool.
  • Preheat an oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper.
  • Unfold puff pastry and cut each sheet into 9 squares. Place heaping spoonfuls of the filling in the center of each square. Gather all 4 corners of the pastry and pinch together at the top, forming a small pouch. Place each pastry on the baking sheet, about 1 inch apart.
  • Bake in the preheated oven until golden brown, 22 to 27 minutes. Cool on the baking sheet for 10 minutes before removing to cool on a wire rack. Serve warm or at room temperature.

FAST, CREAMY CHICKEN CURRY

Fast, Creamy Chicken Curry image

A blended curry powder is one of the original convenience foods, a venerable spice rub that can improve the flavor of almost anything. Even a good chicken breast is about as bland as meat can get, but spiced with a little curry, its flavor comes alive. In this dish, season sliced onions and chicken breast with the spice and finish the sauce with sour cream. The process is streamlined so that it takes no more than 25 minutes. Begin cooking white rice, the natural accompaniment, before cutting the onion. (After reading some of the reader comments on the original recipe, we decided to retest it, and we've made some changes and clarifications to the below recipe.)

1 medium onion, peeled and sliced
Kosher salt and freshly ground black pepper to taste
1 1/2 teaspoons curry powder, or to taste
1 pound boneless, skinless chicken breasts, sliced diagonally ½ -inch thick
1 cup sour cream

½ teaspoon ground cinnamon
½ teaspoon garlic powder

Tips:

  • Use a large pot or Dutch oven to make the curry filling so that there is plenty of room for the chicken to cook and the sauce to simmer.
  • Don't be afraid to adjust the amount of curry powder to your liking. If you like a milder curry, use less powder. If you like a spicier curry, use more.
  • Be sure to cook the chicken until it is cooked through. This will help to prevent the filling from becoming runny.
  • Allow the curry filling to cool slightly before assembling the cream puffs. This will help to prevent the cream puffs from becoming soggy.
  • When filling the cream puffs, be sure to use a piping bag fitted with a star tip. This will help to create a nice, even filling.
  • Bake the cream puffs until they are golden brown and puffed up. This will take about 30 minutes.
  • Serve the cream puffs warm or at room temperature. They can be enjoyed on their own or with a side of your favorite dipping sauce.

Conclusion:

Curried chicken cream puffs are a delicious and unique appetizer or snack. They are perfect for parties or potlucks, and they are sure to be a hit with your guests.
