Tips:

  • Choose the right carrots: Baby carrots or young carrots are ideal for this recipe as they are tender and flavorful. If using regular carrots, peel and cut them into thin strips.
  • Don't overcrowd the pan: When sautéing the carrots, make sure not to overcrowd the pan as this will prevent them from cooking evenly.
  • Cook the carrots until tender: The carrots should be cooked until they are tender but still retain a slight bite. Overcooked carrots will become mushy.
  • Use a good quality curry powder: The curry powder is the key ingredient in this dish, so make sure to use a good quality one. Look for a curry powder that is flavorful and aromatic.
  • Add the raisins at the end: The raisins should be added towards the end of cooking so that they plump up but do not overcook and become tough.

Conclusion:

Curried carrots with raisins is a simple but flavorful side dish that can be enjoyed with a variety of main courses. It is a great way to use up leftover carrots and is also a good source of vitamins and minerals. The curry powder and raisins add a sweet and savory flavor to the carrots, making them a delicious and healthy addition to any meal.
