INDIAN SAAG

Indian Saag image

Indian saag is a curry of cooked mustard or similar 'bitter' greens (kale, collards, turnip greens), and spinach or similar mild greens (chard, bok choy, beet greens). Any combination of greens works! Use more spices and peppers for hot saag, or less for mild.

Tips:

  • Choose the right cut of beef: For this recipe, a chuck roast or brisket is ideal. These cuts are tough but full of flavor, and they will become tender when braised in the curry sauce.
  • Don't overcrowd the pan: When browning the beef, make sure to do it in batches so that the meat doesn't steam instead of sear.
  • Use a good quality curry paste: The curry paste is the key to this dish, so make sure to use a brand that you trust. If you can, try to find a paste that is made with fresh ingredients.
  • Don't be afraid to adjust the spice level: This recipe is written with a medium spice level, but you can easily adjust it to your liking. If you want it spicier, add more curry paste or chili powder. If you want it milder, omit the chili powder and use a milder curry paste.
  • Serve with your favorite sides: This dish is delicious served with rice, noodles, or bread. You can also add a side of yogurt or chutney to cool things down.

Conclusion:

Curried beef and bitter greens is a flavorful and satisfying dish that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste preferences. So next time you're looking for a new curry recipe to try, give this one a try!
