BRAISED PORK CHOPS WITH APRICOTS
Steps:
- In a heavy skillet heat the oil over moderately high heat until it is hot but not smoking, in it brown the pork chops, patted dry and seasoned with salt and pepper, and transfer them to a plate. Add 1 tablespoon of the butter to the skillet and in it cook the shallot, the cumin, the ground coriander, the zest, and the gingerroot over moderately low heat, stirring, until the shallot is softened. Add the wine, the broth, and the apricots, bring the liquid to a simmer, and in it braise the pork chops, covered, over moderately low heat for 20 minutes, or until they are tender. Transfer the chops to a serving plate with a slotted spatula and keep them warm. In a small bowl stir together well the remaining 1/2 tablespoon butter, softened, and the flour until the mixture is well combined, add the beurre manié to the braising liquid, and bring the sauce to a boil, stirring. Simmer the sauce for 1 to 2 minutes, or until it is thickened, stir in the fresh coriander and salt and pepper to taste, and pour the sauce over the pork chops.

- Arrange a rack in top third of oven; preheat to 450°F. Stir curry, pepper, brown sugar, and 2 tsp. salt in a small bowl.
- Rub an 18x13" rimmed baking sheet with oil. Sprinkle pork chops and potatoes with spice mixture on prepared pan to evenly coat, then arrange in an even layer with potatoes cut side down.
- Roast until pork is golden brown and cooked through and potatoes are deeply browned on cut sides and fork-tender, about 20 minutes. (The pork might finish cooking before the potatoes do; if so, transfer pork to a cutting board and let rest, then continue roasting the potatoes until done.)
- Meanwhile, whisk yogurt, lemon juice, and remaining 1/2 tsp. salt in a medium bowl.
- Arrange pork and potatoes on a platter. Top with yogurt sauce, radishes, and pomegranate arils.
- Do Ahead: Yogurt sauce can be made 1 day ahead. Cover and chill.

- In a small bowl, combine apricot nectar, apricot preserves, Dijon mustard, soy sauce & curry powder. Mix well, then set aside.
- Sprinkle chops with lemon pepper, then, in a small nonstick skillet, cook the chops in oil for 5 to 7 minutes on each side or until a meat thermometer reads 145 degrees F (Make that 160 degrees, if you're an ol-fashioned cook!). Remove chops & set them aside.
- Add apricots & onions to the pan & cook, stirring, for 2 minutes.
- Stir in the nectar mixture, then return chops to the pan & heat through, spooning the sauce over the top of the chops. Cook until sauce is slightly thickened.
- At that point, eat & enjoy!
