1 c. flour
1 c. sugar
1 c. fruit cocktail (juice and all)

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, combine flour, sugar and fruit cocktail (including the juice). Pour into a well-greased 8" by 8" baking dish, or an 8-inch cast iron skillet. Bake for about 20-25 minutes, or until it's-as Truvy would say-"gold and bubbly."
  • Top with vanilla ice cream, to "cut the sweetness," of course.

I originally found this recipe in The Emerald Coast Women's Club Cook Book in the early 2000's. I've modified it slightly and I like the result. It's a super easy appetizer and guests LOVE it!

1 can(s) green chiles, diced
1 can(s) artichoke hearts, canned
1 c mayonaise
1 c shreded italian cheese mix or shreded parmasean
1 bag(s) corn chips
smoked paprika

Steps:

  • 1. Rough chop the can of Artichoke Hearts and add to mixing bowl
  • 2. Add the can of diced green chiles to the mixing bowl
  • 3. Measure out a cup of cheese. I tried the mixed fancy Italian cheeses. Usually this is made with shredded parmesan. Add to the mixing bowl.
  • 4. Add a cup of mayonnaise to the other ingredients in the mixing bowl.
  • 5. Stir all ingredients together well. Then pour into a shallow baking dish.
  • 6. Sprinkle the top of the mixture with smoked paprika.
  • 7. Place dish in a pre-heated oven (375 degrees) and bake for 40 minutes or until it is bubbling and done all the way through. Baking time will depend on the depth of the dish.
  • 8. Serve with Corn Chips and enjoy!
