CHOCOLATE-TAHINI FUDGE CAKE
Steps:
- Place an oven rack in the middle position and preheat the oven to 300 degrees F.
- Grease a 9-inch cake pan with cooking spray or butter. Line the bottom with a parchment round. Set aside.
- In a medium mixing bowl set over a saucepan with barely simmering water over medium-low heat, add the butter, tahini and chocolate chips. Gently cook, stirring occasionally, until just melted and smooth. Whisk in the granulated sugar until combined. Remove from the heat. Add the eggs one at a time, whisking until fully incorporated. Add the vanilla and salt and stir to combine. Add the flour and mix until just combined.
- Pour the cake batter into the prepared pan. Bake for 1 hour to 1 hour and 15 minutes, until a toothpick inserted into the middle comes out with a few fudgy crumbs and the sides pull slightly away from the pan. Cool completely in the pan on a wire rack.
- To assemble the cake, remove the cooled cake onto a platter or cake stand. Cut and serve with a dollop of Tahini Whipped Cream and crumbled halva on top.
- In the bowl of a stand mixer fitted with the whisk attachment, add the heavy cream, powdered sugar and salt. Beat on low speed until incorporated, then increase the speed to medium. Beat to medium peak and then add the tahini. Beat until smooth and just under a stiff peak.

CUPID'S CHOCOLATE CAKE
I found this recipe in the Taste of Home Magazine, it is by Shelain Duncan. I made this for my husband birthday when we were first married. I think he was trying to pull a fast one on me. I found out later that his mom always refused to make Chocolate cake with white icing. I have attempted this feat twice in our 7 years of marriage - you think I would have learned! Anyways, despite MY cakes end appearance, it tasted wonderful!

Tips:
- Mise en Place: Before starting, ensure all ingredients are measured, prepped, and ready to use.
- Room Temperature Ingredients: Bring butter, eggs, and milk to room temperature for better emulsification and a smoother batter.
- Measuring: Use a kitchen scale for accurate measurements, especially for flour and sugar.
- Mixing: Mix the batter until just combined to avoid over-mixing, which can result in a tough cake.
- Baking: Preheat the oven to the correct temperature before placing the cake batter in. Keep the oven door closed during baking to maintain a consistent temperature.
- Cooling: Allow the cake to cool completely before frosting or serving to prevent the frosting from melting.
- Frosting: For a smooth and even frosting, use a piping bag or spatula to apply. You can also chill the frosting before using for a firmer consistency.
- Decorating: Get creative with your decorations! Use sprinkles, chocolate chips, or other toppings to add a personal touch to your cake.
