2 pounds boneless lamb leg
1 tablespoon cumin
1 teaspoon cayenne

1 1/2 to 2 pounds boneless beef sirloin
3 cloves garlic, minced
2 teaspoons smoked paprika
1/2 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/3 cup red wine vinegar
1/2 cup olive oil
Special equipment: 4 (12-inch) metal skewers

Steps:

  • Cut the beef into 1 1/2 to 1 3/4-inch cubes and place into a large mixing bowl. Set aside.
  • In the bowl of a food processor combine the garlic, paprika, turmeric, cumin, salt, pepper and red wine vinegar. With the processor running drizzle in the olive oil.
  • Pour the marinade over the meat and toss to coat. Place in the refrigerator in an airtight container or a sealable plastic bag and allow to marinate for 2 to 4 hours.
  • Preheat the grill to medium-high heat. Thread the meat onto the skewers leaving about 1/2-inch in between the pieces of meat. 2 pounds sirloin flap steak, flatiron steak or flank steak, thin as you can get
12 12-inch skewrs, soaked 30 minutes in water if wooden

Steps:

  • Stir together oil, oregano, garlic, spices and 1/2 teasp. salt in a bowl. Cut beef in 1 1/2 inch pieces, toss with marinate and chill at least 2 hours. Prepare grill medium-hot. Thread about 4 pieces of beef on each skewer, leaving small spaces. Oil grill and grill beef until browned but still pink, 4-5 minutes.

1 lb lean ground beef
1/2 cup grated onion
1 teaspoon minced ginger (or ginger ground to a paste) (optional)
1 teaspoon ground cumin
1 teaspoon ground coriander
1/4-1/2 teaspoon cayenne (adjust for your heat preference)
1 teaspoon salt
1/4 cup plain yogurt
1 teaspoon rice vinegar
1/4-1/2 cup packed chopped coriander leaves (or 1/4 cup minced mint leaves)
