Yield Makes 2 cups

Number Of Ingredients 8

1 teaspoon whole cumin seeds
1/2 teaspoon whole coriander seeds
2 large egg yolks
1/4 cup fresh lemon juice
2 tablespoons Dijon mustard
1 teaspoon coarse salt
1/4 teaspoon cayenne pepper
3/4 cup grapeseed oil

Steps:

  • Place cumin and coriander seeds in a small skillet and toast until fragrant over medium-high heat. Transfer to a spice grinder; grind to a fine powder.
  • Place egg yolks in the bowl of a small food processor along with lemon juice, mustard, salt, ground cumin and coriander, and cayenne pepper; pulse to combine. With the machine running, slowly drizzle in grapeseed oil until emulsified. Keep refrigerated until ready to use.

Tips:

  • For the best flavor, use freshly ground cumin seeds. You can grind them yourself using a spice grinder or mortar and pestle.
  • If you don't have any cumin seeds, you can substitute ground cumin powder. However, the flavor will be less intense.
  • Feel free to adjust the amount of cumin to your taste. If you like a stronger cumin flavor, add more. If you prefer a milder flavor, add less.
  • Cumin mayonnaise is a great dip for vegetables, fish, or chicken. It can also be used as a sandwich spread or salad dressing.
  • Cumin mayonnaise can be stored in the refrigerator for up to a week. Be sure to keep it covered so that it doesn't absorb any other flavors from the refrigerator.

Conclusion:

Cumin mayonnaise is a versatile and flavorful condiment that can be used in a variety of dishes. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a new way to spice up your meals, give cumin mayonnaise a try!
