This is the cool and creamy sauce that usually is served as a condiment on Greek Gyro sandwiches. The recipe calls for the thicker, Greek Yogurt, also called, "Greek Cheese". If you can't find this type of yogurt, you can use plain, regular yogurt from the grocery store. But in order to get the sauce to the desired thicker consistency, you need to suspend the yogurt in a cheesecloth for a couple of hours to drain some of the water off. 3 cups Greek yogurt (also called Yogurt Cheese, see below for alternative)
3 tablespoons lemon juice (or juice of one lemon)
1 garlic clove, minced
1 large English cucumber, diced (the long, skinny ones)
1 tablespoon salt (for salting cucumbers)
1 tablespoon fresh dill (or both, depending on preference) or 1 tablespoon of fresh mint, chopped (or both, depending on preference)
salt & freshly ground black pepper

Steps:

  • Peel cucumbers and dice. Put them in a colander and sprinkle with the tablespoon of salt (draws water out). Cover with a plate and sit something heavy on top. Let sit for 30 minute Drain well and wipe dry with a paper towel.
  • In food processor or blender, add cucumbers, garlic, lemon juice, dill and/or mint, and a few grinds of black pepper. Process until well blended, then stir into yogurt. Taste before adding any extra salt, then salt if needed. Place in refrigerator for at least two hours before serving so flavors can blend.
  • This will keep for a few days in the refrigerator, but you will need to drain off any water and stir each time you use it.
  • ** If you can't find the thicker Greek Yogurt Cheese, you can use regular, plain yogurt that is either full fat or low fat. To thicken, spoon yogurt into cheese cloth that has been quadrupled. Draw the corners of the cloth up and tie together. Suspend above a bowl for 2 hours so that water can drip out. The consistency of the yogurt should be like that of sour cream.
  • You can skip this draining process, if you want, but you will have a moderately messier, runnier result.

1 pound frozen calamari, tubes and tentacles, thawed

2 medium (blank)s cucumbers
½ teaspoon salt
2 cups nonfat plain yogurt
1 bunch scallions, thinly sliced
1 clove garlic, minced
½ teaspoon cracked black pepper
1 pinch cayenne pepper
2 medium (2-1/4" to 3" dia, raw)s baking potatoes, scrubbed
3 large eggplants, trimmed
2 tablespoons olive oil
2 medium onions, chopped
½ teaspoon salt
3 tablespoons garam masala
1 ½ tablespoons minced fresh ginger root
1 ½ tablespoons minced garlic
2 (14.5 ounce) cans diced tomatoes with juice
½ cup vegetable broth
2 medium (blank)s jalapeno pepper, seeded and minced
2 cups frozen peas
1 cup nonfat plain yogurt

Steps:

  • To make yogurt sauce, peel and seed 2 cucumbers. Finely shred using a food processor, or finely dice by hand. Toss with salt and place in a colander. Allow to drain for at least 1 hour, stirring occasionally.
  • Combine drained cucumbers, yogurt, scallions, garlic, black pepper, and cayenne in a bowl. Refrigerate until needed.
  • While you prepare the cucumbers and sauce, preheat the oven to 450 degrees F (230 degrees C). Place potatoes on a baking sheet.
  • Roast potatoes in the preheated oven for 15 minutes.
  • Meanwhile, cut eggplants in half lengthwise and place cut-sides down on a medium baking sheet. Add eggplant tray to the oven.
  • Continue to roast eggplants and potatoes until tender and eggplants begin to brown, about 30 minutes more.
  • Remove from heat and allow eggplant and potatoes to cool, 10 to 15 minutes. Peel eggplant (skin should pull off rather easily). Potatoes do not need to be peeled, but may be if you prefer. Chop eggplant and potatoes into large bite-sized cubes.
  • Heat oil in a large pot over medium heat. Add onions and salt and cook until onion is tender, about 5 minutes. Add garam masala, ginger, and garlic and cook until spices are fragrant, about 1 minute. Add diced tomatoes with their liquid, vegetable broth, cubed potatoes, cubed eggplant, and jalapeno peppers. Cover and simmer for 20 minutes. Add peas and allow to simmer until peas are hot but still bright green, 5 to 10 minutes. Stir in yogurt.

1 egg
1/4 cup milk
1 medium onion, minced

  • Pre-heat the oven to 350 deg.

2 1/2 ounces goat's-milk or sheep's-milk feta cheese, crumbled (1/2 cup)
1/2 cup nonfat plain Greek yogurt
1 tablespoon fresh lemon juice
1/8 teaspoon finely grated garlic (from 1 small clove)
1/2 English cucumber, cut into half-moons (1 cup)
1/2 ounce upland cress or watercress (1 cup)
1/4 ounce fresh mint leaves (1/2 cup)

  • Heat a double-burner grill pan over medium-high heat.
  • In a large mixing bowl, combine ground lamb, garlic, capers, parsley, zest, mustard, salt and pepper. Form mixture into 2 similar sized mounds in the bowl. Divide mixture in half, then half again. Form gently into 8 small patties.
  • Oil the grill pan with oiled paper towel held in tongs. Brown the burgers on the hot side of the grill for about 2 minutes on each side.
  • Turn heat down to medium and cook another 2 minutes for medium-rare, 3 to 4 minutes for medium.
  • Slice 8 mini buns in half and toast on grill or in broiler for about 30 to 60 seconds. Place on serving platter.
  • Top the bottom each bun with burger, slice of Roma tomato, and a spoonful of sauce. Cover with the bun top and serve.
  • Peel the cucumber and cut it in half lengthwise. Use a spoon to scoop out the seeds from both halves. Grate the cucumber on the wide holes of a grater, put it in a colander in a large bowl or sink and sprinkle with 1/2 tablespoon of kosher salt. Let drain for about 20 minutes. Press the cucumber with your hands to get rid of some of the moisture and place in a medium mixing bowl. Add The yogurt, dill, mint, cumin and pepper. Stir together and spoon into a serving bowl. Drizzle with olive oil.

FINGERLING POTATO SALAD:
1 pound fingerling potatoes or other small boiling potatoes
Water
Salt
1 cup Champagne vinegar
1 tablespoon sugar
Freshly ground black pepper
1/2 medium red onion, cut into 1/4-inch dice
1 cup good-quality canned chicken broth
2 tablespoons unsalted butter
Tzatziki (Cucumber-Yogurt sauce): Use recipe from Barefoot Contessa
GRILLED SALMON:
4 fresh wild salmon fillets, each about 6 ounces
Extra-virgin olive oil, for brushing
Salt
Freshly ground black pepper
4 dill sprigs, for garnish

Steps:

  • Several hours before serving, make the potato salad: Rinse the potatoes, leaving their skins on. Put them in a saucepan with enough cold water to cover well and add a sprinkling of salt. Bring to a boil over high heat, and then adjust the heat to maintain a steady boil and cook until the potatoes are just tender enough to be pierced easily with a long metal skewer, about 15 minutes. Drain well, transfer to a large mixing bowl filled with ice and water, and leave until thoroughly cooled, about 30 minutes. Meanwhile, in another mixing bowl, stir together the vinegar, sugar, and salt and pepper to taste. Peel the potatoes, using your fingertips and, if necessary, a small, sharp knife to slip off their skins. Cut each potato crosswise into discs about 1/4 inch thick and add them to the vinegar mixture. Add the red onion, toss gently, cover with plastic wrap and marinate in the refrigerator for 3 to 4 hours. Make tzatziki For the salmon: Preheat an outdoor or indoor charcoal or gas grill. Brush the salmon fillets on both sides with olive oil and season lightly with salt and pepper. Grill to the desired degree of doneness, about 4 minutes per side per 1 inch of thickness for medium, 5 minutes per side for cooked through but still moist. Meanwhile, put the potato salad in a sauté pan with the chicken broth and butter and cook over medium heat, stirring occasionally, until heated through. Taste and adjust the seasonings with more salt and pepper, if necessary. To serve, spoon the potato salad onto 4 serving plates to form even beds. Place a salmon fillet on top of each. Spoon some of the cool cucumber sauce over each fillet and around the plate, transferring the rest to a serving bowl to pass at table. Garnish each serving with a dill sprig. Serve immediately.

16 bamboo skewers
1 lb boneless skinless chicken breast
1 shallot, peeled and finely chopped
2 garlic cloves, minced
1 tablespoon ginger, fresh grated
1 jalapeno, seeded and chopped
3 inches piece lemongrass, sliced
1 tablespoon canola oil
2 tablespoons cilantro, chopped
1 cup light coconut milk
1 tablespoon lime juice
1 tablespoon soy sauce
1 tablespoon turmeric
1/2 cup nonfat plain yogurt
1/2 cucumber, peeled, seeded and diced
2 tablespoons red onions, chopped
1 tablespoon cilantro, chopped
salt and pepper

Steps:

  • Soak bamboo skewars for atleast 30 minutes or overnight.
  • Heat oil in small saucepan. Combine shallots, garlic, ginger, lemon grass and jalepeno and saute for 5 minutes on medium low heat. Put remaining marinade ingredients in a seperate bowl and add cooked mixture. Let cool. Cut chicken breast into 16 slices (appoximately 1 oz each). Pour over chicken and refrigerate atleast 1 hour.
  • Meanwhile mix yogurt sauce ingredients, cover and refrigerate.
  • Preheat grill. Skewer each piece of chicken with one skewer. Place chicken on grill and cook 2 minutes on each side. Serve with yogurt sauce.

1 1/2 pounds fresh spinach (about 2 medium bunches), stems discarded and leaves washed, rinsed thoroughly, and drained
1 cup dried lentils, picked over
1 small red onion, chopped (about 1 cup)
3 tablespoons olive oil
1 tablespoon red-wine vinegar
1 cup plain yogurt
2 garlic cloves, minced and mashed to a paste with 1/4 teaspoon salt
1/2 large seedless cucumber (about 3/4 pound)
six 6- to 7- ounce flounder fillets
1/2 cup loosely packed fresh mint leaves (about 1 bunch), chopped
1/2 cup crumbled feta cheese (about 2 ounces)
Garnish: mint sprigs

Steps:

  • Line 2 baking sheets with paper towels. In a kettle of boiling salted water blanch spinach in small batches 2 seconds and transfer with tongs to paper towels, laying it flat, to drain.
  • In a saucepan bring 4 cups of water to a boil with lentils. Simmer lentils, covered 15 minutes and add salt to taste. Simmer lentils, covered, until just tender, 3 to 5 minutes more, and drain well. Transfer lentils to a bowl.
  • While lentils are cooking, in a heavy skillet cook onion in 1 tablespoon oil over moderate heat, stirring, until softened, about 5 minutes. Stir in lentils, vinegar, and salt and pepper to taste.
  • Cook lentil mixture, stirring, until just heated through and keep warm.
  • In a bowl whisk together yogurt and garlic paste. Peel cucumber and remove any seeds. Cut cucumber into 1-inch pieces and in a blender blend until smooth. Whisk cucumber into yogurt mixture with salt and pepper to taste and let sauce come to room temperature.
  • Preheat oven to 400°F. and lightly oil a shallow baking pan.
  • Pat flounder fillets dry and season with salt and pepper. Divide spinach among fillets, overlapping leaves to cover each fillet completely on one side, and transfer fillets, spinach sides down, to oiled pan. Sprinkle top of fillets with half of mint and wrap with remaining spinach, overlapping leaves until fillets are completely covered. Brush tops of fillets with remaining 2 tablespoons oil and bake fillets in middle of oven until cooked through, about 10 minutes.
  • Stir remaining mint into sauce and stir feta into lentil mixture.
  • Divide lentil mixture among 6 plates and top with fillets. Spoon some of sauce onto each plate and garnish fillets with mint sprigs.

1 shallot

Snow peas:
1 lb. snow peas
1 tbsp. olive oil
Salt

Steps:

  • Mix ingredients for marinade and marinate salmon at least 2 hours. Cut and trim snow peas. Chop chives for snow peas in food processor. Wipe out processor. Add first 9 ingredients for Cucumber Yogurt Sauce and pulse until smooth. Stir mixture into yogurt, and then stir in mustard and pepper. Chill. Cook salmon at 450 degrees for 14 minutes. Add snow peas to broiler pan and top with oil, salt, pepper, and lemon zest. Broil for 1 minute. Rotate pan and broil for an additional minute. Top with chives.
