This was given to me by a friend. She makes this for sandwiches to be served at showers and parties. It is very refreshing and a great way to use some of those summer cucumbers. Just spread onto bread!

1 (8 ounce) package cream cheese, softened
1 cucumber - peeled, seeded, and chopped
2 green onions (white part only), chopped
1 tablespoon milk
1 tablespoon mayonnaise
½ teaspoon cayenne pepper
¼ teaspoon lemon pepper

Steps:

  • Mix cream cheese, cucumber, green onions, milk, mayonnaise, cayenne pepper, and lemon pepper together in a bowl until smooth.

2 -3 green onions
8 ounces cream cheese
2 teaspoons sugar
1/4 teaspoon salt

  • Peel the cucumber and cut in chunks. If it's got a lot of big seeds, scoop some out and discard. Put it in a food processor and chop fine. If it's really moist, or you didn't seed it, then you may want to squeeze off some of the excess juice.
  • Put the onion in the processor and chop. Add the rest of the ingredients. Process, scrape down the sides, and process again until smooth.
  • I like it best on soft, white bread. But it's also great on crackers.
