SOUR CREAM CUCUMBER SALAD

Sour Cream Cucumber Salad image

"ONE OF the staples of Ukrainian cooking is sour cream. This combination of sour cream and cucumbers makes a very tasty salad. During the summer we use cucumbers from our garden for that wonderfully fresh, crunchy taste. But store-bought cucumbers work almost as well, so we enjoy this dish year-around-it goes especially well with meat dishes."

"Not only is this the only way my kids will eat cucumbers, but they actually request it!" Karen reports. "The recipe is simple and delicious." Karen found the recipe about 5 years ago and revised it by sweetening it up with a bit more sugar. Even though her kids won't eat plain raw cucumbers, they still love this side dish. 1/3 cup light sour cream
2 tablespoons onions, diced
1/2 teaspoon salt

Steps:

  • Put cucumber slices in a serving bowl. Set aside.
  • Mix remaining ingredients well, and pour over sliced cucumbers. Mix throughly.

Tips:

  • Select fresh and firm cucumbers: Look for cucumbers that are deep green in color and have no blemishes. Avoid cucumbers that are yellowing or have soft spots.
  • Chill the cucumbers before slicing: This will help them stay crisp and refreshing in the salad.
  • Use a sharp knife to slice the cucumbers: This will help you get even, thin slices that will absorb the dressing better.
  • Don't overdress the salad: A little bit of dressing goes a long way. Too much dressing will make the salad soggy and bland.
  • Serve the salad immediately: Cucumber salad is best enjoyed fresh. If you need to make it ahead of time, store it in the refrigerator for up to 2 hours.

Conclusion:

Cucumber salad with sour cream is a refreshing and delicious side dish that is perfect for summer gatherings. It is easy to make and can be tailored to your own taste preferences. With its creamy, tangy dressing and crisp, refreshing cucumbers, this salad is sure to be a hit at your next party or potluck.
