CUCUMBER RAITA (CUCUMBER SALAD)

Cucumber Raita (Cucumber Salad) image

This is a recipe I am posting for ZWT - India, untried by me at this time. I found this recipe on "Greeting India". Sounds like a wonderful side dish of cucumber salad. Time doesn't include the time to drain yogurt so allow 1/2 hour in addition to time posted.

Categories     Vegetable

Time 5m

Yield 4-6 serving(s)

Number Of Ingredients 8

1 large cucumber
2 cups plain yogurt
1 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon black pepper
salt
1/2 teaspoon lime juice
mint (to garnish)

Steps:

  • 1. Drain excess liquid from yoghurt by placing it in a mesh strainer or in cheesecloth for about half an hour.
  • 2. Roughly chop the cucumber with its seeds and skin. Season with salt, black pepper, and lime juice. Set aside.
  • 3. Transfer the drained yoghurt to a large bowl. Add cucumber mixture, cumin, and paprika. Mix well.
  • 4. Allow the raita to chill for 10-15 minutes, then garnish with mint.
  • 5. Serve as a cooling side dish with curried vegetables and rice.

Tips:

  • Select the right cucumbers: For the best results, choose fresh, firm cucumbers that are free from blemishes and bruises. English or Persian cucumbers are ideal for raita, as they have a mild flavor and a crisp texture.
  • Chill the raita before serving: This will help to enhance the flavors and make the raita more refreshing.
  • Use high-quality yogurt: For the best flavor and texture, use whole milk yogurt that is plain and unsweetened. Greek yogurt can also be used, but it will result in a thicker raita.
  • Add your favorite spices: Raita is a versatile dish that can be customized to your liking. Try adding different spices, such as cumin, coriander, or garam masala, to create a unique flavor profile.
  • Garnish with fresh herbs: Before serving, garnish the raita with fresh herbs, such as cilantro, mint, or dill. This will add a pop of color and flavor to the dish.

Conclusion:

Cucumber raita is a refreshing and flavorful side dish that is perfect for any occasion. It is easy to make and can be customized to your liking. With a few simple ingredients, you can create a delicious raita that will complement any meal. So next time you are looking for a quick and easy side dish, give cucumber raita a try!
