2 - Cucumbers
12 - cherry tomatoes
4 oz. - cream cheese softened
1 tbsp. - mayonnaise
3 tbsp. - light ranch
1 tbsp. - frozen or fresh dill
¼ tsp. - garlic salt
Black pepper for garnish

Steps:

  • Rinse, peel and slice each cucumber into half inch slices.
  • Remove little of insides of the cucumber with a half tea spoon measurement.
  • Combine softened cream cheese, mayo, and ranch. Mix it well until smooth in texture.
  • Add dill and garlic salt and mix just until combined.
  • Place all the topping into a piping bag with a star attachment and pipe out about a ¾ of a tbsp. into each prepared cucumber.
  • If the topping has hard time to stick to cucumber pat dry the cucumber juice with paper towerl before piping.
  • Cut cherry tomatoes in half and insert into each cucumber topping.
  • Sprinkle with black pepper over the cucumber bites, serve and enjoy. This appetizers can be prepared several hour before serving, make sure to refrigerate until ready to serve.

Fresh and great when using pre-chilled produce, this smart little appetizer is wonderful as a snack or warm up to your back yard summer dinner party. I came up with this recipe when I went on the Vegetable Broth Fast and everyone like it so much I thought I would share the recipe with you. It is pretty much guacamole on a slice of cucumber. Except while on the fast I omitted the cilantro, onion and seasonings. Still pretty good. The dish is easy and quick to make. The perfect recipe for unexpected guests or when you find yourself in a pinch for time.

3 large and ripe avocados
1 yellow onion
1 ripe tomatoes
1/2 cup cilantro
1 cucumber
1 lime, halved
1/2 teaspoon garlic salt
1/2 teaspoon ground black pepper
1 pinch chili powder

Steps:

  • * Peel and dice all the onion.
  • * Dice the tomato.
  • * Chop the cilantro.
  • * Peel and pit each avocado.
  • In a medium sized mixing bowl combine the avocados, onion, tomato, and cilantro smashing it all together with a fork. With the lime half squeeze the lime juice into the mixture. Add the salt, pepper and chili powder and continue mashing till a creamy/lumpy texture is achieved. Set a side.
  • With the other lime half rub the cut side on a serving platter so the plate has a thin layer of lime juice on top of it.
  • On a cutting board thickly slice a cucumber so each slice is about a quarter of an inch. Lay each slice flat on the platter. Once all the slices are in place spoon a dollop of the avocado mixture onto each slice of cucumber. Garnish with cilantro leaves if you like. Enjoy!

1 1/4 cups sugar
1/2 teaspoon mustard seeds
1/2 teaspoon whole black peppercorns
1/4 teaspoon celery seeds
1/4 teaspoon celery seeds
Coarse salt
16 ounces Kirby cucumbers, trimmed and cut into 1-inch rounds
1/2 small white onion, cut into 1/4-inch wedges

Steps:

  • Combine vinegar, sugar, spices, and 2 tablespoons salt in a saucepan. Bring to a boil, stirring until sugar is dissolved. Fill clean containers tightly with cucumbers and onion.
