Caraway Bloody Marys with Mini Reubens image

2 tablespoons unsalted butter, melted
6 slices rye bread
1/4 cup Russian dressing
3 slices Swiss cheese
3 ounces sliced deli corned beef
1/2 cup drained sauerkraut (save some brine for the Bloody Marys)
6 cornichon pickles
4 cups tomato juice
1 cup vodka
2 tablespoons sauerkraut brine
1 tablespoon hot sauce, preferably Crystal, or more to taste
1 tablespoon lime juice
1 1/2 teaspoons celery salt, plus more for garnish
1 1/2 teaspoons Worcestershire sauce
1 teaspoon ground caraway seeds
1 teaspoon ground horseradish
1 teaspoon sugar
4 cloves garlic, smashed
Kosher salt and freshly ground black pepper
1 head celery

Steps:

  • For the mini Reubens: Preheat the broiler. Fit a rack 8 to 6 inches from the heat source.
  • Brush the melted butter over each bread slice. Flip over and add a layer of Russian dressing to each slice, followed by a piece of cheese. Layer the corned beef on half the bread slices, followed by a spoonful of sauerkraut. Build 3 sandwiches with the remaining slices, cheese-side down.
  • Broil, flipping halfway through, until brown and toasty, about 4 minutes. (Keep an eye on this so that it doesn't burn.) Cut off the crusts and slice each sandwich into 4 squares. Place a cornichon, the sandwich and another cornichon on a skewer. Repeat to make 5 more skewers.
  • For the Bloody Marys: Mix together the tomato juice, vodka, brine, hot sauce, lime juice, celery salt, Worcestershire sauce, caraway seeds, horseradish, sugar, garlic and a few turns of black pepper in a pitcher. 2 teaspoons Tabasco Chipotle Pepper Sauce (see Cook's Note)
1 tablespoon Worcestershire sauce
1 cup good vodka, such as Grey Goose
Kosher salt and freshly ground black pepper
2 tablespoons Old Bay Seasoning
1 lime wedge, plus 6 lime slices, for garnish
18 large pimento-stuffed olives, such as Sable and Rosenfeld
6 cooked and peeled jumbo shrimp, with tails on

Steps:

  • In a large pitcher, stir together the tomato juice, clam juice, and lime zest. In a small glass measuring cup, whisk together the lime juice and wasabi powder and add to the pitcher. Stir in the Tabasco, Worcestershire, vodka, 1 teaspoon salt and 1/2 teaspoon pepper.
  • Spread the Old Bay Seasoning on a small plate. Moisten the rims of six highball glasses by running a lime wedge around the edge of each glass and dip the rims in the Old Bay Seasoning. Set aside to dry.
  • Fill the glasses half full with ice and pour in the Bloody Mary mixture. For each drink, add 2 or 3 olives threaded on a 6-inch skewer, then place one shrimp and one slice of lime on the rim of each glass. Serve cold.

2 garlic cloves, minced
4 ciabatta rolls, split
2 tablespoons yellow mustard
8 slices swiss cheese
8 slices dill pickles (lengthwise slices)
8 ounces thinly sliced deli roast pork
8 slices cooked bacon

Steps:

  • In a small bowl, combine the oil and garlic and set aside.
  • Trim tops & bottoms of rolls to make flat surfaces. Brush the outsides with the garlic oil mixture and spread the insides with mustard. Place one cheese slice on each bottom roll then top with pickles. Divide pork evenly among the bottoms and top with bacon and the other 4 cheese slices. Replace tops.
