5 lbs pork shoulder
2 Tbsp. olive oil, (extra virgin)
1 lemon
1 lime
1 orange
1 Tbsp. dried oregano ((leaf, not ground))
1 Tbsp. ground cumin
10 garlic cloves, (minced)
1 tsp. salt
1/2 tsp. pepper
1 white onion, (cut into rounds)

Steps:

  • Add the pork shoulder to the slow cooker. Using a small knife cut slits into the pork, about an inch down.
  • In a large bowl add the olive oil. Cut the lemon, lime and orange in half. Squeeze the juice out of the citrus into the bowl. Add the oregano, cumin, garlic, salt and pepper. Whisk until combined.
  • Pour the mixture over the pork roast. Using a spatula squish the garlic and sauce into the pork.
  • Add the onion rounds.
  • Cover and cook on LOW for 10 hours without opening the lid during the cooking time.
  • Shred the meat with 2 forks and remove the bone. I left about half of the juices with the meat to keep it moist.

3 pounds boneless pork shoulder
1 large sliced onion

Steps:

  • For the marinade, combine lime juice, orange juice, water, garlic, oregano, salt, cumin, pepper, and bay leaves in a medium bowl. Pierce meat in several places and place in zip-top bag. Pour marinade over meat. Refrigerate overnight.
  • Remove from fridge, put meat and marinade into crockpot; top with sliced onion.
  • Cook on Low for 10 to 12 hours or on High for 5 to 6 hours.
  • Discard bay leaves and remove meat. Using 2 forks, shred pork.

4 pork chops (1 inch thick)
1 tablespoon black pepper
2 teaspoon kosher salt
1 1/2 teaspoon ground cumin
1 teaspoon garlic powder
1 tablespoon onion powder
1 tablespoon dried oregano
3 tablespoon canola oil
1 onion (sliced)
2 cloves garlic (chopped)
1 cup orange juice
1/4 cup fresh lime juice
1/4 cup vinegar
1/2 cup chicken broth
1 Roma tomato (chopped, for garnish (optional))
1/2 avocado (sliced, for garnish (optional))

Steps:

  • In a small mixing bowl, combine all dried spices. Pat the pork chops dry with a paper towel and rub with the dry spice mixture.
  • Heat oil in a large saute pan over high heat.
  • Place the pork chops in the pan and sear on 1 side until brown. Flip over sear until brown.
  • Remove chops and place in crock pot (slow cooker).
  • Add onion and garlic to pan and saute for 1-2 minutes, add onion/garlic to crock pot with the pork. Combine orange juice, lime juice, vinegar, and chicken broth and pour over the pork in the crock pot.
  • Cover and cook for 45 min - 1 hour on high heat or 2 hours on low heat. Check for doneness depending on the size of the chops. They may need more time in the crock pot if they are bigger pork chops. Don't keep them in the crock pot too long or they will dry out.
  • Pour remaining liquid over the chops when ready to eat. Garnish with the slow-cooked onions and tomatoes and/or avocado. Enjoy!

Steps:

  • In a blender or mini food processor, combine the garlic, grapefruit juice, lime zest and juice, 2 tablespoons of the oil, brown sugar, oregano, cumin, and salt; process until blended. Transfer to a large bowl and add the pork and bay leaf; toss to combine. Marinate, covered, at room temperature for 1 hour (or refrigerate for up to 6 hours).
  • Using the sauté function set on high if available, heat the remaining 1 tablespoon oil in the pressure cooker (or use a large skillet). Remove the pork from the marinade, reserving the marinade, and shake the meat to remove any excess liquid. Cook until it is browned on all sides, about 12 minutes (you will need to do this in batches, transferring the browned pork pieces to a plate as you go).
  • When all the pork is browned, return the pieces to the pot along with any juices from the plate. (If you used a skillet, add 1 tablespoon water and use a wooden spoon to scrape the skillet well to include all the browned bits stuck to the bottom.) Add the reserved marinade to the pot. Cover and cook on high pressure for 80 minutes. Let the pressure release naturally.
  • Remove the pork from the cooking liquid (jus). Taste the jus, and if it seems bland or too thin, boil it down either in the pressure cooker on the sauté setting or in a separate pot on the stove until it thickens slightly and intensifies in flavor, 7 to 15 minutes. Remove the bay leaf and add a bit of salt if necessary. If you'd like to degrease the jus, use a fat separator to do so, or just let the jus settle and spoon the fat off the top.
  • Shred the meat, using your hands or two forks. Toss the meat with the jus to taste (be generous-1 1/2 to 2 cups should do it), and serve with cilantro, lime wedges, and hot sauce.

Juice of 1 lime (2 tablespoons)
Juice of 1 orange (2 tablespoons)
3 to 3 1/2-pound boneless pork shoulder
One 24-inch sub roll
Yellow mustard
1 pound Swiss, thick-sliced
1 pound honey ham, thinly sliced
2 cups dill pickle chips
2 red onions, thinly sliced

Steps:

  • Mix the oil, salt, cumin, oregano, black pepper, red pepper, garlic, lime juice and orange juice in a small bowl. Make slits in the pork with a paring knife and rub liberally all over with the oil mixture. Place the pork in a slow cooker and top with the remaining juices from the bowl. Cover and cook on low until tender, flipping once halfway through, about 6 hours.
  • Remove from the slow cooker and let cool slightly. Shred the pork into thick chunks with 2 forks. Set the pork aside and keep warm in the cooking liquid.

  • Remove the chops from pan and put on a warm plate. Continue to reduce juices in pan by half. Pour over the chops and serve immediately.
  • Garnish with watercress, tomatoes and avocado.
