Time 55m

Yield 4 serving(s)

Number Of Ingredients 10

1/2 cup orange juice, sour (fresh is ok)
1 tablespoon olive oil
1 tablespoon fresh lime juice
2 garlic cloves, minced
1 teaspoon paprika
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
4 chicken breast halves, skinned
cooking spray

Steps:

  • Combine juices, oil, garlic, paprika, oregano, salt and chili flakes in a large zip-top plastic bag.
  • Add chicken; seal and marinate in refrigerator at least 1 hour and up to 3 hours.
  • Preheat oven to 375 degrees.
  • Place chicken in a 13-by-9-inch baking pan coated with cooking spray.
  • Bake, covered, 20 minutes; uncover and bake 25 minutes or until chicken is done.
  • Serve with Coco Rice With Green Onions recipe #.

Tips:

  • For the best flavor, use a whole chicken and cut it into 8 pieces. This will allow the chicken to absorb more of the marinade.
  • If you don't have time to marinate the chicken overnight, you can marinate it for at least 30 minutes. However, the longer you marinate it, the more flavorful it will be.
  • When grilling the chicken, cook it over medium-high heat so that the skin gets crispy and the chicken cooks through.
  • To make the mandarin black bean salad, use fresh, ripe mandarins. If you can't find mandarins, you can use canned mandarin oranges instead.
  • If you don't have black beans, you can use another type of bean, such as kidney beans or pinto beans.
  • For a spicier salad, add a pinch of cayenne pepper or red pepper flakes.
