CUBAN BLACK BEANS

This classic recipe is adapted from "Tastes Like Cuba," by Eduardo Machado and Michael Domitrovich. The secret is the homemade sofrito, but bottled will do in a pinch.

1 1/2 green peppers, stemmed and seeded
10 garlic cloves
1 pound dried black beans, rinsed and picked over to remove any stones
1 smoked ham hock
2 bay leaves
5 teaspoons salt, or to taste
1/4 cup olive oil
4 slices thick bacon, cut into 1/2-inch pieces
1 Spanish onion, diced
1 jalapeño, stemmed and finely chopped
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
3 tablespoons distilled white vinegar
1 tablespoon turbinado or other brown sugar

Steps:

  • Cut 1 green pepper into 1-inch squares. Smash and peel 4 of the garlic cloves. Put the green pepper and garlic into a large pot with the beans, ham hock, bay leaves and 1 tablespoon salt. Add 2 quarts water and bring to a boil. Cover the pot and simmer until the beans are tender, an hour or more.
  • Meanwhile, make a sofrito. Cut the remaining ½ green pepper into ¼-inch dice. Peel and finely chop the remaining garlic. Heat the olive oil in a very large skillet over medium-high heat. Add the bacon and cook, stirring occasionally, until it starts to brown, about 5 minutes. Add the green pepper and onion and cook, stirring, until slightly softened, about 3 minutes. Add the garlic, jalapeño (leave out the seeds if you don't want it too spicy), oregano, cumin, black pepper and 2 teaspoons salt and stir for another minute. Pour in the vinegar and scrape any browned bits from bottom of pan with a wooden spoon. This is your sofrito.
  • When the beans are cooked, discard the bay leaf. Remove and set aside the ham hock and let it cool. Transfer 1 cup of beans to small bowl, mash them into a paste with the back of a fork and return to the pot. Add the sofrito, then the sugar. Pull the meat from the ham hock, leaving behind any white sinew or gristle. Chop the ham into ½-inch pieces and return it to the bean pot.
  • Stir the beans well and bring to a boil over medium heat, then lower to a simmer and cook, uncovered, for 20 minutes or so, skimming any foam from the top. Taste for salt and serve with white rice.

1 pound dried black beans
1/4 teaspoon baking soda
1 to 2 teaspoons olive oil
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon sugar
1 teaspoon white vinegar
Ten to fifteen 3-inch cilantro stems, tied in a bundle
3 bay leaves
1 onion, diced
Kosher salt and freshly ground black pepper

Steps:

  • Soak the beans with the baking soda in 10 cups of water for about 3 hours. Rinse and drain.
  • Add the beans to a Dutch oven and add 10 cups fresh water, along with the olive oil, cumin, oregano, sugar, vinegar, cilantro stems, bay leaves and onion. Simmer until the beans are soft, about 2 hours. Add 2 teaspoons of salt (or more to taste) and freshly ground black pepper to taste.

Steps:

  • Heat oil in heavy large saucepan over medium heat. Add onion, bell pepper, garlic and oregano and sauté until vegetables begin to soften, about 5 minutes. Add 1 cup of beans to pan. Using back of fork, mash beans coarsely. Add remaining beans, broth and vinegar and simmer until mixture thickens and flavors blend, stirring occasionally, about 15 minutes. Mix in sugar, if desired. Season beans to taste with salt and pepper and serve.

3 tablespoons olive oil
1 onion, chopped
1 bell pepper, chopped

2 smoked Spanish chorizo sausage links, coarsely chopped
1 cup chicken stock
1 (8 ounce) jar picante sauce

1 teaspoon salt, or to taste

Steps:

  • Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and liquid has been absorbed, 20 to 25 minutes.
  • Heat olive oil in a stockpot over medium-high heat; saute onion, bell pepper, carrots, celery, and garlic in hot oil until tender, about 5 minutes.
  • Mix black beans with liquid, chorizo, chicken stock, picante sauce, bay leaves, paprika, red wine vinegar, cumin, sugar, salt, black pepper, and red pepper flakes together in the pot with the onion mixture; bring to a boil, reduce heat to medium-low, place a cover on the pot, and simmer until the beans have softened, about 30 minutes.
  • Remove lid from pot and continue cooking until the mixture reaches your desired consistency, at least 20 minutes more. Remove bay leaves and adjust seasoning to your preferences. Serve over rice.

Authentic Cuban-style black beans take a great deal of time but are well worth the wait. It is said that adding a teaspoon of baking soda in the last hour of cooking lessens the gastric after-effects of eating beans.

1 lb black beans
2 large green peppers (cut into several large slices)
10 cups water
2/3 cup olive oil
1/2 teaspoon black pepper
1 large onion (diced)
1/4 teaspoon oregano
4 garlic cloves (crushed)
1 bay leaf
2 teaspoons sugar
4 teaspoons salt
2 teaspoons vinegar
2 teaspoons olive oil
2 teaspoons dry wine

Steps:

  • Wash beans and let them soak in water and half of the green pepper over night at room temperature.
  • Once beans have swollen, simmer on stove until they become soft (about 45 minutes).
  • Heat olive oil in pan and sauté onion, garlic, and the rest of the green pepper.
  • Add 1 cup of the coked beans to pan and mash well.
  • Return entire mixture to pot with beans.
  • Add salt, pepper, oregano, bay leaf, and sugar.
  • Cover and return to boil.
  • Simmer for 1 hour longer.
  • Add vinegar and dry wine, cover and simmer for one hour longer.
  • If beans are still too wet after this time, cook uncovered until they thicken.
  • Remove bay leaf and top with olive oil prior to serving.

1/4 cup white onion, finely diced
2 teaspoons cumin
2 tablespoons fresh oregano, chopped (or sub 1 tsp dried if needed)
3 tablespoons fresh cilantro, chopped (only fresh or frozen, not dried!)
2 fresh garlic cloves, minced
1 tablespoon fresh lime juice
1 lb pork, cut into 1 inch pieces (I buy pre-cut stew pork)
3 tablespoons olive oil
1/4 cup flour
2 teaspoons cumin
1 teaspoon dried oregano
1/4 teaspoon cayenne pepper (to taste)
1 teaspoon onion powder
1 teaspoon garlic powder
1 (16 ounce) package yellow rice (I prefer Vigo)

Steps:

  • Prepare yellow rice according to package directions.
  • To prepare the black beans, combine the first seven ingredients in a medium saucepan.
  • Bring just to a boil, then reduce heat to simmer on a back burner, stirring occasionally.
  • Meanwhile, heat olive oil in a heavy skillet over medium-high heat.
  • Combine remaining dry ingredients (flour, cumin, oregano, cayenne, onion powder, and garlic powder) in a 1 gallon zipper bag.
  • Add pork to bag and shake vigorously to coat.
  • Remove pork from bag and add to hot oil.
  • Brown on all sides, stirring until done.
  • Remove pork to a plate and turn off heat to skillet.
  • Pour black bean mixture into skillet to absorb pork drippings, stir gently until combined.
  • To serve, put a scoop of yellow rice on each plate, topped with a generous ladle of black beans.
  • Top with pork and garnish with lime wedge and sprig of cilantro.

  • Rinse and sort beans; soak according to package directions. Drain and rinse beans, discarding liquid. , Place beans in a large saucepan; add 6 cups water and bay leaf. Bring to a boil. 1 lb 16 ounces dried black beans soak beans night before
8/9 c water
2 large sweet bell pepers seeded, one diced and set aside
1 large onion diced
6 large cloves garlic smashed, and three set aside for later
1 tsp garlic powder
3/4 c olive oil, 1/4 cup set aside for later
1 large bay leaf
1 tsp dried oregano, 1/2 tsp set aside for later
1/4 tsp ground cumin
1/4 tsp ground black pepper
1 1/2 tsp sugar, 1/2 tsp set aside for later
2 1/2 Tbsp vinegar, apple or wine vinegar
3 Tbsp red table wine
1 small jar stuffed green olives with pimentos, drained
1 large can fire roasted red pimento peppers, drained, cut in strips. pimientos morrones goya brand
1 Tbsp salt

Steps:

  • 1. Sort and clean beans, then rinse twice in cool water. In a heavy cooking pot, add water to cover the beans completely and soak overnight in the refrigerator. NOTE: what ever I have put in the above recipe that states Set Aside for Later does not go into the pot now. (Example recipe calls for 3/4 cup olive oil, half goes in now; the other 1/4 cup gets set aside for later). Next morning do not throw soaking water away put on the stove, to the pot add one whole green pepper core and seeds removed, cut pepper in half; add the two halves like this to the pot. Add half cup olive oil, three cloves garlic smashed, 2 tbls vinegar, 1/2 tsp oregano, cumin, salt, bay leaf, 1 tsp of sugar, and 2 tabelspoons red wine. Cover and cook on medium low flame for about 2 1/2 hours.
  • 2. While beans are cooking make this sofrito, This sofrito should be added to the beans, after two and a half hour of cooking has past. In a large skillet heat remaing 1/4 cup olive oil; add the other remaining diced green pepper,the diced onion, the three cloves of remaining smashed garlic, plus the teaspoon of garlic powder; plus the 1/2 tablespoon of sugar, the black pepper, and remaining 1/2 tsp of oregano; and saute until onion and peppers are limp. Next add about 20 olives whole from the jar do not mince or cut and add the fire roasted pimento strips. salt to taste saute for another minute and set aside. After 2 1/2 hours have passed add your sofrito mixture to the simmering beans; give a good stir. Cover and cook for another hour. After your hour has passed uncover the pot and with a potato masher, Mash down two or three times only. (No more then three times). Next take a large spoon and give another good stir making sure to mix everything very good. If the liquid level in the bean pot has dropped down or has started to absorb add another one cup of water. Stir well again taste to see if they have enough seasoning (salt) Cover again and cook for another hour always on a low simmer. Total time now should be 4 1/2 hours. Uncover pot; Beans should be sort of thick not watery, They will not be real thick either, if still a little watery uncover the pot and cook for another half hour uncoverd. Stir often to be sure your beans do not stick to the bottom of the pot. Taste to see once again if seasoning is right salt and pepper and serve on top of fluffy white rice. I have a recipe for white rice posted. You can also eat the beans in a bowl with crusty cuban bread, however, they are almost always eaten on top of white rice or on the side. traditionaly almost always a fresh ham roast is served with the rice and beans or at Christmas a whole pig is roasted and served with these beans and rice. 1/2 cup chopped green bell pepper, chopped
1/2 cup chopped red bell pepper, chopped
small onion, chopped
2 cloves garlic, minced
1 cup uncooked long grain rice
15 oz can black beans (don't drain)
1 1/2 cups water
1/2 tsp cumin
1 bay leaf
pinch oregano
salt and pepper to taste

Steps:

  • In a heavy medium sized pot, heat oil on medium heat. Add onions, peppers and garlic and saute until soft, about 4-5 minutes. Add rice, beans, water, cumin, bay leaf, oregano and salt and pepper Simmer on medium-low heat, stirring occasionally, until the rice absorbs most of the water and just barely skims the top of the rice Cover, reduce heat to low, and simmer 20 minute (don't peek). Make sure you have a good seal on your cover, the steam cooks the rice. After 20 minutes, shut flame off and let it sit, covered another 5 minutes (don't open the lid).

1 lb dried black beans
1 green bell pepper, chopped
10 cups water
2/3 cup olive oil
1 large onion, minced
1 green bell pepper, minced
4 garlic cloves, pounded
4 teaspoons salt
1/2 teaspoon pepper
1/4 teaspoon dried oregano
1 teaspoon sugar
1 bay leaf
2 tablespoons vinegar
2 tablespoons wine
2 tablespoons olive oil

Steps:

  • Wash beans.
  • In a large pot, soak the beans with the first chopped bell pepper in water until swollen. Overnight?.
  • **It doesn't say so but I'd drain it at this point and add new water so the beans won't be so musical if you know what I mean.**.
  • Cook until soft about 45 minutes.
  • Heat oil in a medium pan. Add onion, second bell pepper and garlic and cook until soft.
  • Add 1 cup of cooked beans and mash them well. Add mixture to bean pot.
  • Add dry seasonings to the pot.
  • Cover and boil 1 hour.
  • Add vinegar and wine.
  • Cover and simmer 1 hour.
  • If broth is too watery, uncover and cook until it thickens.
  • Just before serving stir in the olive oil.

CUBAN STEAK WITH BLACK BEANS AND RICE

1/4 cup extra-virgin olive oil
3 cloves garlic, finely grated
1 1/2 teaspoons ground cumin
1 1/2 teaspoons dried oregano
Juice of 1 lime, plus wedges for serving
1 1/2 pounds skirt steak, cut into 4 pieces
Kosher salt and freshly ground pepper
1 15-ounce can black beans, undrained
1 cup converted long-grain white rice
2 bell peppers (red, orange and/or yellow), thinly sliced into rings
1 white onion, thinly sliced and separated into rings
1/2 cup pimento-stuffed green olives

Steps:

  • Preheat a grill to medium high. Combine 2 tablespoons olive oil, the garlic, 1 teaspoon each cumin and oregano and the lime juice in a small baking dish. Add the steak, turn to coat and season well with salt and pepper; set aside at least 10 minutes.
  • Meanwhile, combine the black beans with their liquid, the rice, 1 cup water, the remaining 1/2 teaspoon each cumin and oregano, 1/2 teaspoon salt and a few grinds of pepper in a medium saucepan. Bring to a boil over high heat, stirring occasionally to prevent sticking. Reduce the heat to low, cover and cook until the liquid is absorbed and the rice is tender, about 17 minutes. Remove from the heat and set aside.
  • Combine the bell peppers, onion, remaining 2 tablespoons olive oil and a big pinch each of salt and pepper in a large bowl. Grill the peppers and onion, turning occasionally, until browned in spots and crisp-tender, 4 to 5 minutes. Return to the bowl, add the olives and toss. Grill the steaks until browned, about 3 minutes per side for medium rare; transfer to a cutting board.
  • Fluff the rice and divide among plates. Slice the steak and serve with the rice, vegetables and lime wedges.

CUBAN BLACK BEANS AND CUMIN SCENTED RICE



Cuban Black Beans and Cumin Scented Rice image

1 (1-pound) bag dried black beans
4 quarts water
1 smoked ham hock
1 1/3 cups olive oil
2 onions, peeled and finely chopped
12 cloves garlic, peeled, finely chopped
12 small sweet chile peppers, seeded and finely chopped (or your choice combo of hot peppers)
2 bay leaves
Salt and freshly ground pepper
4 tablespoons sugar
1/2 teaspoon whole dried oregano, crushed
1 cup dry red wine
3 tablespoons red wine vinegar
4 teaspoons dried oregano
1 teaspoon ground cumin
Cumin Scented Rice, recipe follows

Steps:

  • Pick over beans, discarding any shriveled ones of foreign particles. Wash well and soak, covered in water, for 4 hours. Drain beans and place in 4 quarts of water in a soup pot. Add ham hock to the beans. Bring rapidly to a boil. Reduce heat to moderate and simmer beans until tender, about 35 to 45 minutes.
  • In a saute pan, heat 1 and 1/3 cups olive oil. Add the chopped onions and garlic to the pan and saute over low heat. Add the chopped chiles and season with salt and pepper. Add the bay leaves and cook for about 10 minutes, stirring occasionally.
  • Add 1 cup of drained black beans to the onion mixture in the saute pan, and mash thoroughly with rest of the ingredients in the skillet. Stir in the sugar and the dried oregano.
  • Add the bean and onion mixture to the bean pot. Cover, and simmer for 1 hour, at moderate heat. Add red wine, vinegar, 4 teaspoons dried oregano and cumin. Uncover and cook until sauce thickens. Serve hot.
  • 1 1/2 tablespoons butter
  • 1 tablespoon cumin seeds
  • 3 cups uncooked basmati rice
  • 2 small limes, juiced
  • 6 cups cold water
  • 2 teaspoons salt
  • Heat butter over medium heat in a large saucepan. When butter is melted, add cumin seeds and saute for 1 minute. Stir in the rice and cook for 2 minutes.
  • Turn the heat to high and add the lime juice, water and salt. Mix well. Bring to boil on high heat. Reduce heat and cook covered on low for 15 minutes until water evaporates.

6 tablespoons extra-virgin olive oil, divided, plus a little to drizzle
2 medium yellow skinned onions, 1 finely chopped, divided, 1 thinly sliced
3 cups chicken stock, divided
1 tablespoon plus 2 teaspoons ground cumin, divided
3 tablespoons fresh thyme, 5 or 6 sprigs, chopped
1 1/2 cups white rice
1 (14-ounce) can black beans
2 pounds flank steak
2 tablespoons grill seasoning blend ( recommended: Montreal Steak Seasoning by McCormick)
1 lime
3 green plantains (they like green bananas and are available in produce department)
Waxed paper
1 small green bell pepper, seeded and finely chopped
4 cloves garlic, cracked away from skin and finely chopped
1 pound small shrimp, peeled, deveined and coarsely chopped
Salt and pepper
1 lemon
1 (8-ounce) can tomato sauce
3 tablespoons finely chopped parsley leaves
Hot sauce (recommended: Tabasco)

Steps:

  • Heat a medium pot over medium heat. Add 1 tablespoon extra-virgin olive oil, 1 turn of the pan, and half of the finely chopped onion. Saute 3 minutes, then season with 2 teaspoons cumin, eyeball the measurement in the palm of your hand, and the thyme leaves. Pour in 2 1/2 cups of chicken stock and raise heat to bring to a boil. Add rice and lower heat to simmer when boil resumes. Cover pot tightly. After 12 minutes, stir in black beans and replace cover. Cook another 6 to 7 minutes. Turn off rice and beans, season with salt and stir to combine then let stand until ready to serve. While rice cooks, make plantains with shrimp and the meat.
  • Preheat a grill pan over high heat. The meat can also be prepared in a hot, large cast iron or nonstick skillet if you do not have a grill pan.
  • Place flank steak in a shallow dish and drizzle with extra-virgin olive oil to coat ¿ about 2 tablespoons. Mix grill seasoning with 1 tablespoon cumin, eyeball the measurement in your palm. Add the zest of 1 lime to the grill seasoning and cumin. Rub the mixture over the steak evenly. Wash up and cut lime into wedges and reserve. Place the steak on hot grill or in hot pan and cook 4 to 5 minutes, turn and cook 3 minutes longer. Remove from heat and let juices redistribute 5 minutes.
  • Slit the skins of the plantains from end to end to vent them for microwave cooking. Wrap them each in wax paper, twisting up paper at ends. Microwave the plantains 4 to 5 minutes together or 90 seconds each individually on high.
  • While plantains and steak cook, place a medium nonstick skillet on the heat over a high flame. Add 2 tablespoons extra-virgin olive oil and the sliced onions. Sear the onions up and heat through, but leave a bite to them. Place on a platter and cover with foil to reserve heat. Return pan to stove and reduce heat to between medium high and medium. Add 2 tablespoons extra, 2 turns of the pan, and the remaining finely chopped onion, the bell pepper, garlic and shrimp. Season with salt and pepper and add the zest of 1 lemon. Cook until shrimp are firm and peppers begin to soften, 4 minutes or so. Add the juice of 1/2 lemon, the tomato sauce and parsley. Turn off heat.
  • Peel and mash the steaming hot plantains with remaining 1/2 cup chicken stock and a drizzle of extra-virgin olive oil. Season the plantains with salt and pile on platter or dinner plates then top with garlicky shrimp and tomatoes. Very thinly slice the cooked steak on an angle, working against the grain. Squeeze lime juice over the meat and arrange over the cooked sliced onions on serving platter. Fluff up rice and black beans a bit, transfer them to a bowl and pass at table.

I started experimenting with black beans awhile ago. I tried a bunch of Cuban recipes and although most were very good, I wanted the dish to look as good as it tasted. This dish combines complimentary flavors to the beans while adding tons of color. I usually serve this dish alongside rice. If you have time you can cook your own beans in a pressure cooker, but canned beans work fine too. If jalapenos are too spicy for you, you can substitute Anaheim peppers instead.

2 cups cooked black beans
1 large diced red onion
1 diced red jalapeno chile
1 greed diced jalapeno
1/2 yellow bell pepper, diced
2 diced carrots
7 garlic cloves, minced
1/2 bunch chopped cilantro
pepper
2 tablespoons balsamic vinegar
kosher salt
1 lemons, juice of or 1 lime, juice of
3 tablespoons sugar
1/2 teaspoon moroccan seasoning
1/4 lb chopped cooked bacon
2 tablespoons bacon drippings

Steps:

  • Heat large saute pan and add bacon drippings. Throw in all veggies with the exception of the garlic and the beans. Cook until softened and onion is translucent to brown. Add the beans, your seasoning, lemon, vinegar, sugar and bacon. Add the cilantro and your garlic last. They key to this dish is tasting it often to make sure the flavoring is as desired. Serve immediately.

1/2 cup olive oil (preferably Spanish olive oil)
2 garlic cloves, finely chopped
1/2 small red onion, finely chopped
1 medium green pepper, seeded and finely chopped
1/3 cup chorizo sausage, chopped (approx. 1/2 a sausage)
1/2 cup canned tomato, drained and chopped
2 (16 ounce) cans black beans
1/2 cup chicken stock
1 teaspoon ground cumin
1/4 teaspoon hot sauce
1 tablespoon red wine vinegar
salt & freshly ground black pepper
4 green onions, chopped (for garnish)

Steps:

  • Drain one can of black beans and discard the liquid. Save the liquid from the other can of beans, and set it aside.
  • In a medium sized sauce pan over low heat, heat the olive oil until it is fragrant; then add the garlic, red onion, green pepper and chorizo. Cook onion is tender, stirring frequently, about 10 minutes.
  • Add the chopped tomatoes and cook another 10 minutes.
  • Add the beans, bean liquid from the one can of beans, chicken stock, cumin, hot sauce and red wine vinegar. Stir to blend. Correct the seasonings and simmer, uncovered until heated through, about 20 minutes.
  • Garnish with green onions and serve.

Vegetarian Cuban Black Beans image

2 1/2 cups dried black beans
Fail-Proof Brown Rice, recipe follows
9 cups water, plus more for soaking beans
2 tablespoons olive oil, divided
1 1/2 cups chopped onion
1 1/2 cups seeded, chopped green bell pepper
3 tablespoons minced garlic or pickled garlic
Kosher salt and freshly cracked black pepper
1 teaspoon oregano, dried
1 teaspoon ground cumin
1 bay leaf
2 tablespoons distilled white vinegar
3/4 dry Spanish wine
1 1/2 cups brown rice
1 egg white, beaten
3 cups water
1/2 chicken bouillon cube
Olive oil

Steps:

  • Add the beans to a large bowl, cover with water and let stand overnight. Drain and discard the water or cook in a pressure cooker for 18 to 25 minutes (do not discard the water if using the pressure cooker).
  • In a large Dutch oven, add the beans, 9 cups of water and 1 tablespoon of olive oil. Cover and bring to a boil over medium heat. Simmer for 1 hour until the beans are fork tender.
  • In a separate Dutch oven add the onion, green pepper, garlic and the remaining 1 tablespoon of olive oil and saute until opaque. Season with salt and pepper, to taste. (If using a pressure cooker, do not use the pressure cooker to saute the beans any further. Use a heavy pot or a Dutch oven.)
  • Add the cooked beans, to the pot with the onion mixture, along with the oregano, cumin, bay leaf, vinegar and wine. Cover and simmer over low heat for 15 to 20 minutes, stirring occasionally. Add additional salt and pepper, to taste. Transfer the beans to a serving bowl and serve over the Fail-Proof Brown Rice.
  • Preheat the oven to 350 degrees F.
  • In a medium skillet, add the brown rice and the egg white, stirring constantly over medium heat, until the mixture is dry. Mix the water and bouillon cube in a medium bowl.
  • Add a small amount of olive oil to a deep, large baking dish. (Cook's Note: I recommend a clear baking dish so you can monitor the water absorption).
  • Pour the bouillon water, rice and egg mixture into the baking dish. Put the dish in the oven, and do not interrupt the cooking process. After 30 minutes, cover with foil and continue to cook for 30 more minutes, a total of 1 hour. Remove from oven, fluff with fork and serve.

1 (4 ounce) can chopped green chilies, drained
1 medium onion, chopped (1/2 cup)
1/2 cup orange juice
1/4 cup tomato sauce or 1/4 cup ketchup
1/4 cup molasses
1 tablespoon chili powder
1 tablespoon cider vinegar
2 teaspoons soy sauce
4 cups hot cooked rice

Steps:

  • Heat oven to 350°F.
  • Mix all ingredients except rice in a 2 qt casserole.
  • Bake uncovered about 50 minutes, stirring occasionally, until hot and bubbly.
  • Serve over rice.

Tips:

  • Soak the black beans overnight or for at least 8 hours before cooking. This will help to reduce the cooking time and make the beans more digestible.
  • Use a large pot or Dutch oven to cook the beans. This will allow the beans to have plenty of room to expand as they cook.
  • Add the bay leaves, cumin, oregano, and salt to the pot along with the beans. These spices will help to flavor the beans.
  • Bring the beans to a boil, then reduce the heat to low and simmer for 1-2 hours, or until the beans are tender.
  • Once the beans are cooked, remove the bay leaves and season with salt and pepper to taste.
  • Serve the black beans with rice, vegetables, or your favorite protein.
